We are booked in a concierge room also. The search function on the forum is now working well, so I suggest you type in concierge and read the various old threads. I found them very helpful, although I should have bookmarked them for easy access.
With concierge you will be able to check in more quickly in a dedicated line, and will be one of the first boarding the ship. The Category 1,2, and 3 rooms are larger than the other staterooms, and have large verandahs. The concierge team will meet with you around 1pm after boarding to book your into any spa treatments, make Palo ressies, and register children for the kids clubs. They can also help make reervations on the excursions if you haven't already booked them (If you want the Dolphin one, book it ahead directly with the company to avoid being shut out)
In concierge you can get the regular restaurant menus on room service. (I have heard conflicting reports if this applies to the Palo menu and desserts).
The room also has a DVD player so you can use movies stocked by concierge. I like this idea for my kids, so if the clubs don't work out we can still sneak out for a bit while they settle in with a movie.
The main reason we booked a category 3 was for the room size, and so we could enjoy a vacation with the kids and still have privacy. The concierge service wasn't the draw. And that said, I would have done much better price-wise by booking two connecting rooms in a lower category. But we haven't been on a vacation in 4 years, so I decided to go for it!
