What to make with leftover pork roast?

I was thinking of dicing it, adding some gravy and veggies, and putting it in a pot pie type shell. Would you use cream of whatever soup, or brown gravy? I have both. Or, do you have a better idea?

since we have had enough of it at dinner...LOL

I would dice it up and then scramble some eggs with it! Made for a hearty breakfast!

But if you are looking for a dinner idea, why not try a cream of celery soup for the base!

that sounds really good with either cream of (whatever) soup or brown gravy. I'd go with the soup.

The other night with my leftover pork roast, i simmered it in bbq sauce and had pulled pork. It was so good.

I do this in a crock pot. Delicious!
 

Hi,
I shred the pork, throw it in the crock pot with onions, green peppers, garlic, some chili powder and red pepper.. if someone likes it really hot.. throw in some tobasco. Serve it with warm tortillas..........
 
I also shred & mix with Bullseye BBQ sauce. Yum. Serve as sandwiches on rolls with potato chips or potato salad.
 
pork mole?

You add bbq sauce, cocoa, chili and garlic powder. I am sure there are some other ingredients that I am missing. We just made this not too long ago. It was a nice change.
