What to make for dinner with boneless (chicken) breasts?

I took out some boneless chicken breasts for dinner and now I don't know what I feel like making with them. Any suggestions for something quick and easy, dinner is in about an hour.

Honey-Dijon Mustard Chicken Recipe

4 Chicken breast halves -- skinned and boned
1/4 cup honey
1 teaspoon Dijon mustard
2 tablespoons lemon juice
2 tablespoons light soy sauce
Place chicken in an ungreased 11-in. by 7-in. by 2-in. baking dish. Combine remaining ingredients; pour over chicken.
Bake uncovered, at 350 degrees for 35-40 minutes or until juices run clear, turning and basting with pan juices every 15 minutes. Yield: 4 servings
 
Chicken Tonight(sweet & sour is my favorite variety). Cut up the chicken, brown it in a little oil, drain. Add the sauce and let simmer for I think about 25 minutes(recipe on the jar). I serve this with rice pilaf.

Chicken, pasta & broccoli, cut up the chicken and cook with minced garlic and some cut up broccoli, alittle oil and a little butter. Cook until chicken is cooked thoroughly. Add some pasta.

Chicken Scampi...Again, cut up that chicken, and cook with a little oil and minced garlic. When cooked, add lemon juice, wine and butter. Simmer, stirring occasionally. Serve over pasta.

Chicken Parm... Dip chicken in egg then breadcrumbs, and fry in a little oil. Cover with tomato sauce and mozzarella cheese. Bake until the cheese melts.
 
I cook with these things all the time.

*cut up and make chicken stir fry
*put in Crock Pot with 2 cans of cream soup (your choice of flavor - I usually do one Cream of Chicken and one Cream of Mushroom), some sherry cooking wine and a little pepper. Top with parmesan cheese and cook on Low setting till dinner. Serve over pasta or rice.
*if you are a grilling person, just grill them up plain or with barbecue sauce
*if you want to get a little more fancy make my all-time favorite Pampered Chef recipe - Chicken Broccoli Braid.

Take 2 cans crescent rolls and roll them both out flat on a cookie sheet or rectangular baking stone. Roll it flat with a roller, or just press it out with fingers. Take a knife and make 1 inch wide strips down each long side of the dough, leaving about 5 inches in the middle uncut to hold the filling.

To make the filling, cook up your chicken (microwave or stovetop) and chop it up. Put it in a bowl. Add to it, about 1 c chopped broccoli, about 1/2 C chopped red bell pepper (if you don't have red, green works too), 1 clove of freshly pressed garlic, 1/2 C mayo, 8 oz shredded cheddar cheese, and some dill mix seasoning if you have it. Mix all this together and then place it down the center of the pan on top of the dough.'
Now, to make the braid part, start at one end and take one strip of dough from each side of the pan, Bring each strip up over the filling, pinch ends together and give a half twist, and lay atop the filling. Do this down the entire length of the pan until all dough strips are atop the filling.

Bake for 22-25 minutes at 375 and there you go.

Cola Chicken
Makes 4 servings

Ingredients:

4 skinless boneless chicken breasts
1 cup catsup
12 oz can diet cola

Put chicken in non-stick skillet. Pour catsup and diet cola over the top. Bring to boil.
Cover, reduce heat and cook for 45 minutes. Uncover, turn up the heat and continue to
cook until the sauce becomes thick and adheres to the chicken. It turns into the most
incredible BBQ sauce .
 
Ahh, you can do so much with that.


I usually do ginger, soy, white pepper, scallions and I either marinate it, and then bake it for a while.

Or I use it for stirfry.

Or, I make chicken enchiladas.. but its almost too much dairy for me... with the sour cream, soup, cheese its almost too much but DH loves it!

Hey, that's what I'm making for dinner . . .but thankfully my dinner isn't until around 5:30 tonight . . .

I haven't decided whether I wanted to do the red skin potatos all sliced up and string beans or if I want to do the chicken stuffing, cooked baby carrots and applesauce . . .

Hmmmmm decisions, decision . . .

Easy family favorite--

Chicken Enchiladas Suiza

Boneless/skinless chicken breasts, cooked and cubed
Chopped green onion
Sour cream
Shredded cheese (cheddar, jack, or any combination)
Salt and pepper


Mix well. Fill and roll up flour tortillas. Line them up in a 9x13 pan and pour a jar of any salsa over the top. Bake until bubbly, about 40 minutes.

The quantities of the ingredients don't really matter. Just throw it all in. For a family of 5 I usually use about 1 1/2 lbs. of chicken, 8-oz. bag of shredded cheese, 8oz. sour cream and about 4 green onions. Even my kids like this.
 
My family is pretty boring. They like chicken breasts bakes with a package of stuffing mix & cream of mushroom or chicken soup. I prefer to substitute rice for the stuffing. (A can of chicken gravy works well with the stuffing variety.)
 
I make chicken quesadillas. I think that is spelled right.

I slice the raw chicken into small strips, mix with juice of 1 lime or about a tablespoon of lime juice bottled. I add some spices like cumen, dill, seasoned salt then cook in a skillet until done.

Take flour tortillas and I put one in bottom of my electric skilled on med. heat. Toss on cheddar and jack cheese, the chicken pieces, black olives and peppers and onions I have sauteed after the chicken in the same skillet so they get some of the brown lime on them. I fold in half and turn over. Voila. Family loves them. I also do this with beef or with leftover beef...just add lime and seasonings and heat up in skillet for a few min.
 
My family likes chicken and dumplings. These dumplings are the light, fluffy variety instead of the heavy, doughy ones. They are good, quick and very easy.

Boil the chicken breasts until done. Remove and chop. Keep the chicken broth hot. Return the chopped meat to the broth. I have been known to add a couple of bouillon cubes to the broth if I thought it needed it.

Combine:
1 1/2 c. flour
1/2 t. salt
3 t. baking powder
1 egg
3/4 c. milk
1 t. dry parsley

Dip a large spoon in boiling broth and then scoop up a spoon of dough. Redip the spoon in the broth to deposit the dumpling and repeat until all the dough is in the pot. Be sure to dip the spoon in the broth each time. It keeps the dough from sticking to the spoon. Cover and reduce heat, maybe to medium? Cook covered for 12 minutes.
 
Don't have a QUICK meal idea, but the next time you have chicken breasts, try just putting them in a crock pot, add cream of chicken soup and cream of celery soup and put it on low for about 6-7 hours.

Then just make bow-tie pasta noodles (or egg noodles) and just serve the chicken, with its own gravy, over top and VOILA! YUM!
 
Last night I made Quick Cheesy Chicken.

Sprinkle the chicken with garlic salt and oregano. Place in a Pam-sprayed dish, top with cheddar cheese and bake 35 mins in 375 oven. All done!

Chicken Soup turned tortilla soup...

Cut up chicken & put it in a pot of water. Add chicken bouillion if you want (I like to add it). If you have any of the following veggies, add cut onion, celery, carrots, potatoes, mushrooms, (whatever you have). Throw in a half cup to a cup of your favorite salsa (doesn't matter which kind - just adds a little spice to it. Add seasonings to taste (I just add garlic salt & maybe some pepper). Simmer for about a half hour or so - until chicken is cooked.

Sometimes I also add a small handful of rice.

Garnish with some shredded cheese & crushed up tortilla chips. And if you're lucky & have avocado, add a little sliced avocado.

I also sometimes cook rice on the side - either Spanish or chicken-flavored rice. My kids eat the rice on the side, but I put mine in the soup.
 
Butter a baking dish and put in enough breasts to fill the dish (ours fits 6)
then take a can of cream of mushroom soup and sour cream mix together and pour over chicken will be thick.
Use about a half a container of Sour cream.
you can slice mushrooms and put on top of chicken before soup mixture if you so desire!once you have all the ingredients in place pour a smelted stick of butter over it and then add dry stuffing mix over the top we use pepperidge farm stuffing mix.
bake in a 350 oven for about an hour!

when I make this sometimes I forget the melted butter that is ok too!


a quicker meal is to take the chicken all cut up and toss it in a fry pan and cook it
once its almost done and the soup mixture above and pour it over and let it heat up and once its all hot you can serve this over noodles or mashed potato etc and its tasty !!

Actually both are very tasty and are family favorites!!!!!!
