What to do with phyllo?

Sometimes dh thinks it's fun to purchase weird things to try out. Usually, they involve me cooking them, though! We have phyllo dough in the freezer...what should I make with it?

Fruit strudel--especially tasty with sweetened cream cheese and/or nuts added.

Chicken Packets-- Cut Phyllo in to 4" squares. Mix cooked chicken, herbed cheese spread (like Boursin or Alouette Garlic & Herb) and chopped broccoli or spinach (if you like those--otherwise chicken and cheese is fine). Place the chicken mixture in the squares, seal, and bake until puffed and golden. You can make these meal sized or appetizer sized.

Now you've got me hungry!

Baklava, easy to make and so delicious!!!! I just made it a few weeks ago for my DIL's baby shower!

Roll up some asparagus and brush it with melted butter, throw it in the oven.

Make sure you read your directions, you must keep the sheets damp while working with it or they will crumble.

You can use them in place of crust for mini quiches, or bake some empty in muffin pans and fill with creamy pudding and fresh fruit or chocolate mousse to make little tarts.

Tiropites are Greek cheese triangles and OMG they are so good. (they look like little turnovers) They make a nice appetizer and you can form them and freeze before baking. Then just take out as many as you want to bake.

Beef Wellington

Beef Wellington is traditionally made with puff pastry-very different from phyllo dough. I never heard of it that way, but maybe it works?
