So I am cooking a 1/2 spiral ham as I type, but will have lots of left overs. Typically I just chop it up, use for omelets or pop some chopped ham in the freezer for ham salad sandwiches at some point, but I'm looking for other ideas on what to do with it.

I'm not going to add any glazing so it's nto going to have any funky flavoring, just good simple ham. :thumbsup2 So what do you do with your left overs?

scalloped potatoes and ham
ham and bean soup
grilled ham and cheese sandwiches
ham and noodle casserole
breakfast casserole (eggs, ham, hashbrowns, cheese, etc)

I like to add it to macaroni and cheese with some peas. YUMMY!!!! Just boil some elbows and shred some cheddar cheese (or other cheese of your likingO, add it to the elbows, then add the ham and peas. Easy peasy mac & cheesey.:lmao:

One of our favorite dinners is to make scalloped potatoes, then when they are just about done mix in ham and top with cheddar cheese. It is such good comfort food and now I want some! ;)

You could use leftover ham and chicken and add it to gumbo mix....YUM! that's an inexpensive and yummy dinner....
we also sometimes do "breakfast for dinner" and have pancakes and ham on the side.... or make eggs benedict using the ham instead of Canadian bacon.....or homemade egg mcmuffins.
if you've got a panini grill (and even if you don't) you could get sourdough bread and make a "cuban panini"... ham / cheese / pickles. YUM! Or any variation.... I like ham, fresh mozzarella, roasted red peppers, spinach on sourdough....
I kind of feel like the Bubba Gump of ham going on like this!

My husband makes a great potato soup and we usually have to buy the packaged cubed ham, but leftover ham would be great for that.

Breakfast "brick"

cube the ham and mix it with
6 eggs
2 cups of milk
2 cups of cheese
1 1/2 cups of bisquick

pour it into a buttered casserole dish and bake until it firms up.

I cut it into squares and serve with fruit salad.

I also second the mac and cheese with ham and peas idea.

Save the bone for a pot of beans! That with Mexican Cornbread is my kids favorite.

My mom always made creamed ham over toast. You just make a basic cream sauce, add a touch of dry mustard, and when the sauce is ready, add cubed ham. bring back up to temperature and ladle over toast. Delish and inexpensive. I make it once in a while too.:goodvibes

I make bean soup, omlettes, and creamed ham over pastry puffs

It's a basic white sauce (recipe on Wondra container) add the cubed ham and a bag of mixed frozen veggies. Serve over the puff pastry shells.

If I have lots of leftovers, I freeze a package of slices for another meal. Then I can easily pull it out and heat it up while making sides of potatoes and salad.

We use it in a stir fry. It is a little salty but still good. My DH packages it in smaller zip locks and takes one package out each week and uses it as the meat in his sandwich for his lunch. I also take some and put it in my salads that I take for lunch with some cheese. We do this often because it is less expensive per pound for this kind of ham compared to deli ham and it is very tasty.

I have cubed it and used it in pork fried rice. This is areally good use for the chunky end piece.

Toss a handful of ham chunks into a piping hot bowl of ramen noodles. What is not to like about that. That is as easy as opening a can of corn.

I have no true recipe. Just something my Mama would make for lunch when I was a kid.

Chopped ham, miracle whip or mayo, pickle relish, shreded cheddar cheese all measured to taste. Great on Ritz crackers or made into sandwiches on white bread.

this is mostly a "midwestern thing" but we love a good BBQ ham sandwich.. slice it ( yours will be) and simmer it for a while with your favorite BBQ sauce. It's great served with sweet pickles on a toasty bun. I also like fried ham sandwiches. We brown it up really good and serve it with brown mustard.:hippie:
