What to Do? Sept. ADRs

We just got back from a great week. I need to make ADRs for our trip in Sept. this Sat. The thing is, on this last trip, we cancelled many of our ADRs because when the time came to eat, we weren't in the mood for a table service or we felt like something else. I ended up calling same day to make new ressies. My question is this: should I just book the hard to get places like Chef Mickey's, Le Cellier and 1900 Park Fare, or should I just book what I think we may want and end up cancelling and booking other things once we get there?

I would book what you think you want now. With free dining during that time, you may have very limited options "day of".
 
I would book now too. If you want you can always cancel later, but it would suck to be wishing you would have booked something and be unable to get in once you're there! :)
