What to do on your anniversary at WDW (with kids)?

Last year we were at WDW on our anniversary. We were there with another family and there kids. We didn't really do anything to celebrate the occasion. I did have flowers delivered from the WDW florist. We didn't plan anything for dinner and thought we would wing it. We had to eat at the ABC commissary, because it was to long to wait for anything with a bunch of young kids. We have 3 kids (6, 21/2, 6mths) who will be with us. We are staying at the YC concierge. We aren't planning on going to any of the parks then (we are staying at the Polynesian for 6nights and then driving up the coast for 5 nights,and then coming to the YC for 2 nights before we head home).
I would love to hear some suggestions? Any dinner ideas?

We're planning on having PS at Garden Grill in EpCot to celebrate our anniversary. The characters will come to our table and perform rehitchin ceremony.

Well we weren't planning on going to Epcot but maybe we will go and do the rehitchin ceremony. What exactly do they do and when do you let them know you are celebrating your anniversary?
