What to do on Sunday

Need some advice for our schedule. We'll be there April 15 - 22. How busy are the parks on Sunday? We will be arriving on a Friday and tentatively going to Epcot. Plan on doing MK on Saturday. We'll be there until the following Friday, and we won't be going to a park every day.
On Sunday, should we not go to a park and just go resort hopping, relax on the beach, etc.? Or is Sunday a good day to go to a themepark?

I have AK & MGM 1-day touring plan for Monday (after late MGM on Sunday and early MGM and late AK on Tuesday). We will have to rest one or two days, spreading our park days out. The in-laws won't want to do as much walking as DH and I.
I have 3-day hoppers that cannot be added to because they were purchased for last year's band trip. Didn't want to buy extra, but I think we'll have to.
Tuesday, MK &/or EPcot. Then there is the Garden Festival starting that weekend, and we want to see that, too.
Too many "rules" to follow when planning our days! But I am hoping the parks will not be as busy being that this is before the new celebration starting in May.
 

Is the best time to visit any of the parks in our experience.You can see and do much on Sunday mornings before the crowd starts to build. :goodvibes :flower: :sunny:
 
We are going to MK on Sunday April 17th. It will be our first day there and I like doing MK the first day.

I would go to MK first thing in the morning on Sunday... for whatever reason, this is a really good time to go. Have a nice late lunch at The Plaza Restaurant, maybe leave to swim or nap, depending on how everyone is holding up, then return for Wishes that night.
