Since you are not visiting any of the Disney parks, I would go for a park where it pays to be there for opening - the first morning is always our best chance of getting an early start due to jet-lag and we find we don't want to take it easy on the first day but we are eager to hit the parks.
So it's different strokes for different folks
If you have big coaster lovers then if you choose to go to Sea World, head for Kraken and Journey To Atlantis as soon as they open, to ride before the lines get bad.
But if we were not going to a Disney park, we would head for one of the Universal parks to be there for opening - probably IOA to get on Spiderman before the crowds arrive and get Express to ride again!!
