What to do at HS for my age kids?

When we go on our trip my kids will be 5 (turning 6 a month later) and son 2.5, when we went before we didn't spend much time at HS because of the time we had there and weather ended up being really cold and windy (son was 9 months then) anyways I really did love the HS feel and we plan on spending an entire day there. I think it will be more character seeing at that park. We will ride Toy story, watch Little Mermaid & Disney Jr on live and prob Muppets, is there anything else we will want to ride? Looking at what is left I dont think there is for my aged kids. Would any of the other rides appeal to them? Hopeing we wont stand in horrible lines for character meets either since it will be low crowd time. I know we will want to see Sophia, Jake, Toy story characters, maybe Phineas and Pherb, The cars, Wreck it ralph and Venelope.
 
Muppet 3d show is neat & the honey I shrunk the kids play area...maybe Indiana jones show if they can sit still? (there's a bit of waiting)
 
My kids will be 2.5 and almost 5 when we go (they were 1.5 and almost 4 when we went last year). ODS is tall enough for Star Tours and he will ride that with DH. He's also tall enough for Tower of Terror but he says he doesn't want to do that one! Does your son like cars? Mine will like the Lights, Motor, Action Stunt show, as well as Beauty and the Beast. We spend a whole day there but that's mostly because it's hard to fit in all the different shows otherwise! Last time we didn't check out the Animation Building but I believe there's several characters in there as well. They loved the Honey, I shrunk the Kids playground.

By 5 my DS could ride everything in the park and he did (he is very tall and very "thrill" rides don't phase him). He won't admit it, but he loves the shows (Beauty and the Beast, Mermaid). He really liked Indy and Lights Motors Action too. All the adults in our party hate LMA though, so we try to avoid it if possible. He also really liked Star Tours. We have a younger one as well, and it is a bit challenging to keep him entertained in this park compared to the others though. The shows he does get a little rowdy by the end. He does ok on the Great Movie Ride and TSM, but thats about it. Mine is just a bit too young for the playground. We could easily do a whole day plus here with my older DS, but my younger one we are forced to stick to 2 half days and then spend the other half of the day somewhere else where we can focus on more stuff he can do.
 
This isn't a ride but does you oldest like Star Wars? He can do the Jedi Training Academy and fight Darth Vader. My 4.5yo is sooooo excited for this- and he isn't even into Star Wars. You just need to get to HS early to sign him up for a slot.

For Character meets we love having breakfast or lunch at Hollywood Vine/Dine. It isn't cheap but saves so much time compared to waiting in lines- and a much better character experience in my opinion.
 
My oldest is my daughter and she has no idea what star wars is so I dont think she'd be too interested. I dont think she'll like the thrill rides either. I am sure we'll find enough to do. Although I had a friend say she was disappointed in the disney jr live show and you sit on floor and its puppets so we may skip that. I think we will do a few shows and meet characters than do toy story for sure.
 
Are your kids familiar with the Disney Junior characters? I assume yes since you talked about play-and-dine at Hollywood and Vine.

While there are a couple good "rides" at DHS, the best family-friendly attractions are shows. Especially Disney Junior Live on Stage. DD4 loves it even more than Star Tours or Toy Story Midway Mania. https://disneyworld.disney.go.com/entertainment/hollywood-studios/disney-junior-live-on-stage/
Other good shows are the Little Mermaid and Beauty and the Beast. I haven't experienced the Jack Sparrow show yet, so I have no idea if it is suitable for your family.
 
I can't speak so much for the 6 year old, but my three year old loves the Disney Jr. Show, Toy Story Mania, the Honey I Shrunk the Audience Playground, the Muppet Show, the Little Mermaid Show, and the Beauty and the Beast show. She also loves to meet various characters in that park especially the Disney Jr. characters. She doesn't care for the Backlot Tour or the Great Movie Ride.
