what to bring to a pot luck dinner?

I am thinking of either salad or pasta salad and rolls. Any other ideas? I think it needs to be something cold because I won't be able to keep it heated and I don't know when they will be doing the food.

I almost always take pasta salad to a pot luck because thats what people usually request from me. What about a crockpot though? If you want to take someting warm.

Were having a cocktail party and so far this is what we have coming:

stuffed crab pastry
dried fruit & nut tray
Veggie tray
potato salad
pasta salad
fruit salad
coleslaw
4 cakes and some other desserts
crockpot of meatballs
turkey breast sliced
crockpot of bbq mini hot dogs
sliced filet
little mini sandwich rolls
bean salad
shrimp
ham sandwiches on sweet potato biscuits
deviled eggs
cheese tray and crackers
and some various other appetizers but not sure exactly what they have picked
 

I usually bring deviled eggs to our company potlucks. They are cheap, are always one of the first dishes to be empty, and since they are cold, I don't need to stand in line for the microwave with everyone else to reheat them!
 
Last Thanksgiving I bought a bag of cooked shrimp from Costco. I then bought a "fall" plate and a matching martini glassfrom the Dollar Tree. I made my own cocktail sauce, put it in the glass, put the glass on the plate and surrounded it with the shrimp. So easy.
 
I always bring a big salad, either casaer, or one with a cheese (blue, goat, feta), nut (walnuts, pine nuts), and fruit (dried cherries, sliced grapes), with a homemade balsamic vinegrette (romaine and/or field greens). Never any leftovers.
 
Deviled eggs always go quickly. I think it's because no one ever makes them. After I mix the filling I use a cookie press to fill.
 
I always bring an main dish because I figure most people prefer the less-expensive or room-temperature options. I don't go to a lot of potlucks, so I don't mind a little extra expense or time. My feeling is that if someone else is hosting, I can help this way.

I sometimes choose Minestrone or Chicken soups, which I bring in the crock pot, too. If it needs to be heated quickly, just microwave it for a few minutes then put it in the crock and it'll be ready with the rest of the dishes.


* Chicken with Lemon Sauce and Rice: easy recipe and because the chicken is cut small/pounded thin, it goes a long way. I usually make 4 pounds or so - leftovers freeze well. Pound strips of boneless chicken to a 1/4" thickness. Dredge in flour seasoned with salt, pepper, 1 tsp. powdered thyme and a little paprika (for color.) Saute lightly in a little butter and olive oil, then put into a foil baking pan. Add a quart of chicken broth, 1/4 cup chopped fresh parsley, juice of 3 lemons and the hulled-out lemon peels to the pan. Cover and cook at 350°F for 30 minutes. I usually make 1 cup of (uncooked) white rice with chicken broth, parsley and 1/4 cup lemon juice. I cook the rice separately so that it doesn't soak up all the pan juices. Before I put it out, I remove the foil and the lemon hulls, top with a little fresh parsley and some thin slices of fresh lemon.

(My cabinet's a little full of those right now; I'm hoping someone gives a potluck soon so I can clear out my stock. I think the last potluck was in May.)

I always take deviled eggs too......they are gone right away!
I love deviled eggs but they're always better when someone else makes them in quantity. Making 1 or 2 for myself just isn't as tasty, lol.

I like this idea! I will have to remember it next time I have a potluck to go to!

Another idea, I belong to an organization that has a potluck twice a year. One of our biggest "rules" is BRING A SERVING UTENSIL FOR YOUR DISH. I try to always remember that when I go to any potluck...there never seem to be enough serving utensils.


For the OP, if you are unsure, don't forget that you can also bring some sort of beverage. A case of small bottled waters, a few liters of soda, some juice, etc. And there is always desert...super simple and easy to transport if you have to travel, and no need to worry about refrigerating those brownies or cupcakes.

People dive on deviled eggs like they're made out of gold - LOL - so that would be a good choice..

Also, many never think to bring desserts or beverages.. Just another thought..:)

What is the chicken with lemon sauce and rice recipe?
 
Everyone we know seems to be doing some kind of Atkins/gluten-free/wheat intolerance/body detox/cleanse/whatever so shrimp and deviled eggs go FAST! No one even picks at the pasta salad any more.

(PS - not snarking on the celiacs! My brother is one and I have a wheat intolerance.)
