What time should I book Remy/Palo?

Yes. Anyone can request. It's just as close to a guarantee as they'll give if you're concierge.
 
The first and only time at Remy took over 2 hours, closer to three. But we were in no hurry.palo takes around two hours, again we are never in a hurry. We always do late dining so we make reservations about 730 or 8 so we can watch first show. And I personally love the pirate night menu. Always order extra potstickers. They are the best!
 

I TOTALLY forgot about sunset times...so I recommend that you consider looking up the sunset times for some of your ports so that you can try to time your Palo or Remy visit to watch sunset...I will say, it is magnificent! Since you are concierge, I think you can get their help to make this work...

funny story - when I went on the Magic years ago with my kids, I made Palo reservations but am a single mom...I attended the singles lunch hoping to find someone to join me...well, just about no one else attended (except the ship's doctor, all I could think of was the Love Boat)...but two CMs did attend the lunch and told me that THEY would find me a "date"

they did (it was a flop) but because the evening was orchestrated by CMs, we had one of the best tables for a GLORIOUS sunset in Cozmel...still memorable years later
 
what would you say the best rotation is and why?

My friend cared a whole bunch and to be honest, I don't remember her reasoning. After five cruises, I am less likely to orchestrate how the specifics go because I know it wall works out.
