what time do EpCot countries open for lunch?

thinking of an early lunch before hitting the BC pools

World showcase doesn't typically open until around 11 a.m., so I would assume the lunch places would open then as well. I would check at your hotel while you are there on those days just to be sure, as they say, "hours subject to change...."

Check with the hotel - we went one day in search of an early lunch and the World Showcase restaurants didn't open until noon. The restaurants in Future World opened at 11:00 (I think...)

I believe the restaurant times are seasonal -- depending on crowds. When we were there for Mother's day last May the restaurants didn't open until noon (we thought 11 a.m. from previous trips, but ended up at Beaches & Cream instead of China). I'm fairly certain we had a reservation for 11:15 a.m. in China for President's Week -- we cancelled that lunch reservation though, so I don't have a record anymore to be sure.
