What time do CS close anyway?

There have been a few times on trips when we did TS for lunch and planned to do CS for dinner, but by the time we got to the CS restaurant, it was closed. What time do they typically close?
 
It depends. I know it's vague, but the CS restaurant hours do vary. Many do close earlier than the parks. I know at DLR most (if not all) close either 1/2 hour or and hour before park closing.
 
I can't remember what time it was, but the parks were still open. It has happened at Pinnochio's, Cosmic Rays, and Toy Story PP. It's possible it was an hour before park closing. I really don't remember for sure.

They will close. It's an incentive for people to move towards the front of the park and get out of there.

Table service places don't close as early. They will even accept seatings right up until closing.

Disney will very rarely "throw people out" of a park. But I can imagine a group of eight adults who go up to a counter service window and order a full meal with beers at 8:55 at Epcot when the park closes at 9:00. And since they were there before park closing, they can feel like they can stay there. So they order another round. And maybe another one. Chefs de France is still open, why can't that counter service place still serve them?
