What things are "must dos" at AKL?

We will be staying at AKL in January for the first time. We have scheduled ourselves into some pretty busy park days, but I would also like to figure out what things we shouldn't miss at AKL?

We have a Boma and a Sanaa dinner reserved already. But what other activities are sights should be make a point to check out?

If you've never done the culinary tour of Jiko and Boma, you should. It's a free tour (yes, free at WDW!) and you get free samples at Boma, and a bread service to share while you're at Jiko.
Also, if you have a savannah view room, I like watching them feed the animals around 4:00-5:00.
