What Other Theme Parks Should We Try?

DH and I are staying off site in about 3 weeks. We haven't stayed off site since we began traveling to WDW over 16 years ago. We still will be going to the WDW parks this trip but want to try something different. We aren't big thrill ride people.
We haven't been to Universal Studios in about 10 years and neither of us have ever been to Sea World. We have gone to Kennedy Space Center several times and also to Gatorland and even went to pick our own citrus fruit.
Where do you suggest we go for a day away from WDW parks?
I am wondering if there is enough non-thrill ride things for us to do at Universal since we last visited? Is there more to do at Sea World than watch fish and whales? Any other ideas? Thanks for the help!
 
Sea World is our family's favorite park. I'd suggest that if you have never been. It is though mostly great amimal exhibits and shows: The Orca show (Believe), the dolphin show also diving and aerialists (Blue Horizons), a Sea Lion show (Clyde and Semour), a cute little animal show -- dogs and cats (Pet's Ahoy), and a circus type show (Allure). We think all of these are very entertaining. The Wild Artic animal exhibits start with a simulaton ride that is quite fun and then you go though artic animal exhibits - polar bears, Beluga whales. There are two good coaster that you'd probably want to skip if you aren't into thrill rides. Animal exhibits includes chances to touch and feed stingrays, dolphins, and sea lions. There are also Penguin, Manatee, and Shark exhibits that are pretty neat. I think the park has just beautiful landscaping and is a great day for all ages. We are, however, huge marine mammal fans.

If you're into Harry Potter, Islands of Adventure, could be fun.
