What on earth is "essence" ???

Emeril uses this seasoning a lot. I don't claim to be a gourmet chef, but I thought I was aware of most seasonings and spices. I had never heard of essence before Emeril's show.

Can anyone tell me if it really existed before Emeril?
 
It is his own mixture of spices that he created. A little this, a little that, and BAM you've got essence. I too was curious and ended up buying a jar at our grovery store to try it.

Wow, you're fast. Just as I figured. Emeril should specifiy what he is talking about. Not all of his viewers watch 5 days a week, 52 weeks a year and read all his books. Thanks for answering and clearing this up.
 
Once in awhile he will make up a batch of Essence to fill all his viewers in on what is in it. He makes it by the bucket because he uses so much of it. To be honest we weren't crazy about it but maybe it was what I put it on. That jar is still in my pantry 6 months later!
 

It's a catchy marketing phrase to make you feel good about that bottle of mixed spices that you are buying. Why doesn't he just call it Season Salt?
 
Emeril has his own style. I like the essence personally.
 
Hm...not to be gross or anything but essence in my neck of the woods is what skunks squirt. DH and I used to also joke that the cat left her essence on our carpet, and often! :earboy2:

I do not think I could cook with a product they call "essence"......at least not with a straight face I couldn't. :teeth:
 
What's in it? Personally, I love the salt free spice blends from McCormick. Simple way to add flavor without all the added sodium.
 
On his website the recipe is as follows - if you want to make up your own or omit a spice:

Emeril's ESSENCE Creole Seasoning
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
 
Doesn't Emeril have several different types of "Essense of Emeril"?

I bought the premade one at the store and we use it alot. I always put it on a roast that I cook in the crockpot.
