What makes V&A so special?

Yep, you have a point! We actually have dined at the Chef's Table several times. And, interestingly, the V&A kitchen is exceptionally quiet and refined --just like the dining room, but without the mauve (or beige), the tablecloth and harpist.
 
About the jacket thing, when we did the Chef's table and the Queen Vicky room, DH was told he could take the jacket off but had to put it on in the main dining room (i.e. restroom breaks). When we dined in the main room the waiter gently told the men at our table to keep their jackets on... it's got to be a CM by CM thing
My take on the mauve/ beige/ Victorian decor. It's Disney. They do the decor as a stage (hence CMs go on stage). A place like V&A is going to take that idea to the max and create a stage, not just a dining atmosphere. If the waiters didn't look the way they did, it wouldn't be Disney. Its another one of those darned if Disney does it, darned if they don't

Can't speak to the QV room, as I haven't been yet. But the Chef's Table definitely has a different rule when it comes to jackets. It does not vary by CM. Jackets can be removed while seated at the CT, but must be put back on to enter the main dining room.

This has been my experience as well.

This was changed after someone from AAA mentioned to them that it really was something tacky. There are only 43 restaurants in the US rated with Five Diamonds by AAA (plus an additional 12 in Canada, Mexico and Caribbean).

A suggestion like that may be likened to being hit over the head with a club as a hint. I think the hint was something to the effect of you might not keep the fifth Diamond unless this change is made.

And, for Europe, it is the difference between having three or only two Michelin stars.

No problem at all. My d is not a seafood person; her menu had no seafood on it (different choices for what would have been the "fish" course). Mine did, since I love seafood.

They will either call you a few days before your reservation to ask about your preferences, or you can call them and they will work around your preferences.
 
Even if you don't like seafood normally, I would give it a try at V&A it's going to be better than any seafood you ever had. I am not a seafood eater either but wow I didn't know that fish could taste like that.
 
They will normally stagger seating times between 5:30 to 6:15 and again from about 8:30 to 9:15. For CT or QVR they have a single seating only as the meal takes 4-4½ hours.

If we go it'll just be the regular dining room.

I can understand how some might say be open minded about the seafood thing, but the price just isn't worth the risk of me not caring for something IMO. All of this food talk is making me starving.

I agree with you. My d tried some of my seafood, which I thought was divine. She still didn't care for it.

Just let them know ahead of time, and they will substitute other things for seafood for you.
