My favourite Disney book is one from childhood...a Frontier-style Mickey flip book...aah the memories. 
I know that isn't what you meant, so here's another vote for "Designing Disney", "Realityland" and for the Imagineering Field Guides as well as for "Disney War" (not through it quite yet, but its a good read).
I also have a massive, heavy and beautifully printed "The Art of Walt Disney" that cheers me everyday because it sits out in full view.
Lastly, I enjoy "Disney Dossiers: Files of Character From the Walt Disney Studios", a kids book with each set of facing pages depicting a file folder full of details about the character with drawings and insets of posters, some vintage ones even. Most are devoted to one character but there are others for groups like Comical Cows, Brer Beasties and Great Mice of Mystery.
