What is your FP strategy for multiple MK days?

We will be visiting in early May...4 preschool kids...two are 44" and one is 38", the other is an infant. I have planned 4 days (partial days) at MK out of 8 park days. We have EMM on our second MK day.

My issue is with planning FP on our 3rd and 4th MK days. The kids have never been and even after watching YouTube videos, it's hard to predict what they will like or won't like. 7DMT might be great or terrifying. Should I FP the harder to get rides at 60 days out and then modify if the kids aren't fans once we get there? Would "harder to get" include 7DMT, Peter Pan (both on EMM), Belle (which we are doing FP on MK Day 2)?

I know I'm overthinking and it can be changed on the fly but I have to reserve something once our window opens in March.
 
We’re going in early May as well and have 3 MK days. The interesting thing for me is that this is our 4th time going and I still don’t necessarily know what the kids are going to want to do most. It changes every year. Your plan to get the hardest to get FPs and then just modify when you’re there is what I’m doing for day 3. 7DMT, PP, and probably one of the M&Gs for us. I don’t typically do a mountain for an FP because they’re pretty easy to hit at RD and ride multiple times with little wait (Soace being probably the most likely to get busy early). Our MK days are spread apart so after day 2 I plan to ask the kids what they most want to do and adjust the FPs based on that and anything we didn’t get to the other two days.
 
We have two MK days and are dividing the park: frontier and fantasy lands day 1 and tomorrow and adventure lands day 2. Doing the parade and HEA on day 1 so day 2 if we missed anything or want to ride something again we can do it during those times!
 

We never know what the kids will want from year to year. Like others have said, prioritize the harder to get FP now and then you can swap them out if your get wants to ride the People Mover over and over (yes, we have that kid).
 
We do 3 MK days as well. We've done this plan each year since DD turned 4 and DS was 2 and they are almost 8 and 6 now. We FP 7DMT everyday if possible. Day one we head directly to Fantasyland (Peter Pan, Winnie the Pooh, Areil etc), Day two we start to the left in Adventureland (Pirates, magic carpets, Jungle Cruise etc) and day 3 we start in Tomorrowland (buzz, peoplemover, speedway etc). We get fastpasses for 2 fave's in each area for 10 and 11 and (if available) 7DMT around 12. Then quick lunch and back to resort for midday break (or lunch at resort). We book our 4th FP for when we plan to return in the evening and the evening we follow the kids lead wherever they want to go (usually Fantasyland). This way we get to cover the whole park. And you are right in assuming you can change the FP to rides they like if they end up not liking one or two and have other favourites.
