What kind of ADR wizardry is this?

I am at WDW for a week, so I used my check-in date plus 7 days ability. They are on days 4, 6, and 7.

Speaking of Bull and Bear, Opentable says I cannot make a reservation for 1. Do they have bar seating or take walk ups?

Yes they have bar seating but it isn’t much. I recommend being there at opening if that’s the plan. I’ve done it a couple times, they have the full menu at the bar.
