What is the hot new restaurant or lounge?

My 60 day ADR date snuck up on me and I’ve not been paying attention to the new restaurants and lounges is at WDW. We were there last in April but didn’t try anything new because we were with friends on a budget. Our budget is about $300 for 2, including drinks.

Any recommendations?

Pirates Bar (B&B) and Geo-82 are the hottest bars right now. Pirates is fun and family friendly, Geo-82 is adult only and on the expensive side even for a disney bar. Geo-82 is best done late at night so you can hang around and see some of the EP fireworks. Both are hard ADRs to score.
 
Beak & Barrel really depends on where you're sat. Having to get up see a majority of the interactions wasn't very enjoyable. The couple we were sat with were great, we had a smooth and enjoyable conversation, but the theming was lost on where our table was.
 

How much are you trying to stretch the 300? And do you want food or only beverages?
 
Thanks everyone! I grabbed a reservation at Geo-82 at 8:15 on one day and Beak and Barrel at 7:15 on another day. I also grabbed an 8:15 reservation at Narcoossee’s one night. I might replace that with one of the nice offsite restaurants like Bull & Bear or Capa, both of which are new to me. I was thinking of Bourbon Steak, but I’ve read lots of mixed reviews.

I enjoy Narcoossee's and that has been a hard reservation to snag lately. But Bull and Bear and Capa are on another level. I've heard Bourbon Steak is fine but like a nice steakhouse anywhere. Have fun wherever you choose to go!

So I’ve heard. We’re opening up our wallets a little more now that we are comfortably retired and are now choosing to spend more money on a meal. Those restaurants were not even on my radar until now. Narcoosee’s was a placeholder that I knew I would enjoy. We’re also knocking Fort Wilderness Campground off our resort list and staying in a DVC cabin this next trip and getting to a monorail resort will be easy (yes, we will still have a car).
 
If you're staying in the Ft Wilderness Cabins, are you booking a golf cart too? Honestly I strongly recommend it - it makes the stay so much easier and more fun. Just getting to the main bus stop to head to parks, or the boat docks to head to MK or the MK resorts is so much nicer when you can just hop in your cart and buzz down there and park...vs taking the internal bus around.

I usually do a fair amount of premium dining when I go to Disney - it's easy to justify since even a quick-serve burger with fries and a drink are over $20...since nothing's cheap at Disney, might as well go with the good stuff and splurge anyway!

Bull and Bear is excellent - not technically a 'Disney' restaurant but nestled into Disney property...Capa also even though it's in Golden Oak, it's not technically a Disney resort. As for Disney restaurants that have been my regular go-tos and favorites - Jiko remains tops for me - always a fantastic meal and service and experience. Topolino's at Riviera and Tapas at Gran Destino are both solid choices, great views too. I enjoy Steakhouse 71, even if it's not quite at the Signature level, it's still a regular pick for me and solid bargain as steakhouses go. I haven't been to the Disney Bourbon Steak - but the one in my hometown area is excellent so regardless of some mixed reviews I'd have high hopes when I try it. Yachtsman Steakhouse has remained a solid choice over the years and I still go there every few years. I've found Tiffin's in Animal Kingdom to be consistently good, with some nice creativity in the dishes and flavors. Monseur Paul has been excellent - though I sometimes have to watch the menu changes - I don't eat any seafood and they tend to be very seafood-heavy - though they've allowed me to go with two meat courses in lieu of the fish course.

As bars go - depending on what you're into, Geo 82 is a very nice, high-end adults only bar and the liquor selection is very premium - some seriously aged boubons and scotches, tequilas, gins from all over the world, as well as traditional mixed drinks and cocktails.

Disney Springs is always a great choice for a big mix of restaurants and bars - celebrity chefs have been popping up there a lot lately - not many 'signature' dining spots, but some really good food and great bars (Art Smith's Homecomin', Frontera Cocina, Jaleo, Morimoto's, Boathouse, and Summer House are all solid places I frequent often.
 
We did a 8:15 pm Geo-82 reservation and it was incredible. Best bang for your buck as you can order à la carte and still have an excellent fireworks view. B&B is cute. If you want a great restaurant I highly recommend Cake Bake Shop. We had breakfast there one morning and it was so good we went back for lunch on another day. Definitely some of the best service and food I’ve had in WDW.

Speaking of Bull and Bear, Opentable says I cannot make a reservation for 1. Do they have bar seating or take walk ups?

They do have a bar/lounge. I've dined as a solo in the dining room. I think I made a reservation for two but then told them it was just me when I checked in. It was no issue and I had a great time. You can also call the restaurant directly - another time I wasn't seeing availability online and called and begged and they were able to squeeze us in for an early dinner.
 
As mentioned they do have a bar. Like the previous poster, I went there solo last year and just made the reservation for 2, then told them I was only one at checkin. No problems.
