I just made a "sort of" shrimp alfredo. One pound of shrimp. Stir fry in 1 tbs butter and 2 tbs olive oil. Add 2-4 minced garlic cloves (I do 4) and saute for 30 seconds. Add 3/4 cup low fat sour cream (I use a bit more). Remove from heat and add 1/2 cup grated parmesan. Serve over linguini. If the sauce is too thick add a little milk and stir it in well. I tried angel hair and it was too much pasta. Salad and garlic bread on the side. I use the frozen medium shrimp (when they are buy one, get one). I just thaw and peel--that's what takes the longest. You could use bigger shrimp, but then you would have to cut them up AND they cost more!
I divide up the left overs and eat it during the week. Single household, so what ever I cook I have to be willing to eat for several days!
Someone asked me if you could do this with the little frozen salad shrimp to avoid having to peel the others, but I've never tried it.
