Management consists of things like restaurants, catering, theme park operations and merchandise. Other roles include casting services, animal programs (both at DAK and Epcot, presenters and hands on with the animals), marketing, event planning, housing operations, and Guest Relations, to name a few. The management and animal program internships do not require a previous CP (a few marketing ones may be like that too). Roles like Guest Relations and housing operations are only available to alumni of the CP.
