So we are getting the basic ddp with 1 qs, 1 ts, and 1 snack. What if when it comes down to it we cant get any adrs? And therefore cant get into any ts? Does this happen alot?
You'll be able to get most of your reservations if you start making them as soon as your ADR date opens up. At 180 days before you check in you can start making your ADRs for your check in date and the first 10 days of your vacation if you already have your resort reservation booked.
Whatever you can't get at first you can keep looking for online during the months leading up to your vacation. We made our initial dining reservations back in April, but as our plans have changed so have some of our restaurant choices. In the past month we've been able to get Cali Grill, 'Ohana and CRT for next month by checking online several times a day.
You won't be shut out unless you wait until the last minute to make your reservations. Even then something will be available, but it might not be the restaurant or time you want.
It would be highly unusual for there to be NO access to TS. What's more likely to happen is that you can't get a reservation in the park or area where you prefer to be on a certain day.
If you're willing to eat at less popular restaurants, or leave a park and go to a resort or DTD (resorts that are not adjacent to parks often have openings), then you should be able to use your TS credits.

Sure, it happens. Plenty of people book a Disney vacation with the Dining Plan and do little to no research and think they can just show up, with no ADRs, at 6:00 on a Saturday night and walk into Chef Mickey's or Ohana or Cinderella's Royal Table, or whatever, and they get turned away, screaming mad most of the time, because they have the dining plan and should be guaranteed a seat.
But, really, if you are willing to plan at least a few months ahead, you shouldn't have an issue getting ADRs for your TS meals. But if you are wanting some of the biggies, like Chef Mickey, Ohana, LeCellier, Be Our Guest, etc., you need to book them as close to your 180 ADR window as possible.
No, CS restaurants do not take ADRs. If you cannot find a TS restaurant, you can use your TS credit for a CS meal. It is not the best use of a credit financially, but it can be done without an issue.
If you're stuck Big River Grille at Boardwalk is decent and last I checked does not accept ADR's... we used it a few times when not using a dining plan and feeling like a sit down meal.
Wouldn't use it every day or anything but it's a nice backup.
