What goes in salisbury steak???

I am thinking that this is a dish that can be very different, according to where you are regionally, or how 'mama made it'...

What do you put in your salisbury steak and gravy???
I really have a craving to make up a big batch, with some mashed potatos!!!
 
Do you mean right in the meat?

I'd say minced onions and maybe some diced green peppers, with some seasonings. I don't know if people typically use breadcrumbs or not. I wouldn't.

The best salisbury steaks I've ever had were already pre-made in the meat section at our local grocery store. They make up different recipes with meats in the butcher department all the time and they're usually delicious!
 
I guess I was thinking about the kind that is usually made out of cubed-steak... should I be calling it swiss steak??? Hhhhhmmm???

I usually make mine with some finely chopped onions, peppers, etc.. in the sauce or gravy.

Does any curry go in the seasoning???
 
swiss steak... yummmmm

just dredge the cube steak in flour mixed with some onion powder, salt and pepper and fry in a little olive oil. Serve with mashed potatoes and country or brown gravy!



No tomatoes!
 
Okay, I think of salisbury steak as a ground steak served with brown gravy, but swiss steak as a round steak dredged in flour, served with some type of tomato sauce.

I don't know, but I'm sure hungry for either one right now.
 
Finally! Somebody has asked for the recipe for something that I make really well! This is something that I'm frequently asked to bring to potlucks.

It's important to use ground sirloin or at least ground round. If you make brown gravy well, it would be even better with homemade gravy, but it's good even with gravy made from a mix.

1 egg 1 lb. ground round
½ cup dry bread crumbs 1 package brown gravy mix
½ cup tomato juice 1 cup water
½ onion, chopped


Combine egg, bread crumbs, tomato juice and onion. Add ground round. Shape into oval patties and brown in skillet. Mix gravy mix and water, stirring until smooth. Drain grease off meat, add gravy, cover and simmer for ten minutes. Makes 4 servings.
 
Alton Brown did a show on "cubed steaks" once with a couple of different ways to fix them. You might be able to google it up if you're looking for cube steak recipes.

Notice that I said that I use a gravy mix. That's because I don't make homemade brown gravy, or at least not very well.

Mix the ground sirloin or ground round with the egg, bread crumbs, tomato juice, and chopped onion. Then mix the gravy mix with the cup of water in a large cup and set aside. After you have cooked all the salisbury steaks patties (I use my electric skillet to cook them in), drain any grease out of pan (there won't be much grease), put the patties back in the skillet and cover with the gravy mixture. Heat on low to medium until the gravy has slightly thickened.

Homemmade gravy would probably be even better, but I use Pioneer brown gravy mix and it's really good. Better than my homemade gravy anyway. I'm not sure, but I think Pioneer gravy mixes may only be available in the South. You can use any kind, I just like the Pioneer.
 
If your using cube steak then in Texas we call that Chicken Fried Steak.

Beat an egg
Mix flour and salt and pepper in bowl

Dip meat in egg then in flour mixture...fry like chicken.

I don't make the gravy...DH does...maybe someone else can tell you how better than I can but I know it's a basic leftover grease, flour and milk recipe.

Add a side of mashed potatoes, some corn, some fried okra and maybe some green beans....sounds good to me.
 
Salisbury steak isnt "as fried" as chicken fried steak IMHO. There isnt as thick of a coating on it.


I made it last night and it was SO good!!
 
Hubby had that last nite, after rolling mine in flour, seasonings, i make the gravy, pour everthing in casserole dish and bake in oven on 325, for a couple of hours, Boy is this tender, melts in your mouth.
 
Oh forgot about the Homemade Biscuits !!!!!!

there have been a couple different posts on here, so , which recipe are you referring to?
did you make homemade gravy?
what were your steps in 'your' recipe?
confused... did you fry the ??? and then pile them in a casserole & pour gravy on top?
 
I'm sorry, yes fry, then leave a little of the oil drippings in fry pan, mix flour to make gravy, w/ water, make gravy, then put meat and gravy in cassorole dish and put in oven for a couple of hours on 325, keep checking to make sure gravy dosen't need a little water.

ok, made the salisbury steak by the recipe, although I also added green peppers.. I did have some trouble, the meat did not want to stick together & was real loose patty, I think I made the mistake of adding fresh bread crumbs, & not enough of them.

I went over to foodtv.com & checked in on the good eats site for gravy help. & I am shocked I actually finally made a decent home made gravy from all this ( I did use an iron skillet to fry the meat in, to get some good crunchy bits in the pan),, I Need to use meat with MORE fat, since I used ground chuck & there was hardly any drippings to start a Roux for the gravy, but it did turn out ok.
I also made the O'hanas potatos.
 
I like to keep such things simple.

Use a good ground beef, maybe add an egg, possibly a little onion, and cook on a griddle or even in an oven. I like to think of them as a big, fat hamburger. I don't like anything that diminishes the beef flavor I like so much.

I always use fresh bread crumbs and usually throw about 2 slices of bread in my little food processor. The meat is always a bit 'loose' feeling. I think it's the can of tomato juice, but it holds together well when cooking. I may try the green peppers. Can you tell me how you made the gravy?
