Planning way ahead for our August Trip, we went in 06 and we want to try different restaurants this time (only going back to Chef Mickey & Crystal Palace)

ok

Chef Mickey - 1st night for dinner
Crystal Palace - last day -- probably for dinner

Prime Time
Boma or Jiko (thinking of putting the kids in the care center at AK)
Le Cellier
Japanese in Epcot (forgot the name - sit-down cook in front of you)

is Jiko 1 or 2 TB credits?

Jiko is two credits. Your choices look great! I haven't tried Jiko but Boma is wonderful, my favorite restaurant in all of WDW.

I think my husband would probably like Boma better - its just that i'm a pretty picky eater and don't love "buffets" do you think they have a huge variety???

also if we do Boma for only 1 TS credit, thinking the last day perhaps CP for a late breakfast and Ohana for an early dinner....

fun atmosphere but I found the food to be average.

Boma would be my choice. It's 1 credit and if you don't like something there are other things to eat. I enjoyed the place.

Excellent choice. We ate there last week. The only downside I had was they put us at a freaking table in the middle of the walk way right smack in front of the restrooms and next to the servers silverware station and another station for the credit cards. Restaurant manager refused to move us to another table. Basically take it or leave was her attitude. We loved the food, and had a nice glass of ice wine with dessert.
Japanese in Epcot (forgot the name - sit-down cook in front of you)
Tepan Edo would be the place. We ate there as well and it was very good. The place is a zoo with the line heading down the stairs to sign in but once inside the experience was great. is Jiko 1 or 2 TB credits?

Yes, Boma does have a HUGE variety. Biggest variety of the Disney restaurants we have been to. Kona, Boma, and Wolfgang Puck Express are the three restaurants we have to make every trip.

The one thing with Boma though, some of my family is a beef (well done...aka hockey puck) and potato family. They were only so so with it. If you don't mind trying different things until you find something you like, Boma has a huge variety.

One more warning with Boma. The first time we went there, we kept trying different things. Needless to say, all three of us over ate and spent the rest of the evening not moving much.
