as sides at your picnics beside macaroni and potato salad?

I have done cucumber salad, chili, green salad, but what do you guys serve? I am going to have a picnic the week of July 11th and I am thinking I want something different.

Any suggestions?

Fresh fruit. Sliced pineapple, watermelon, honeydew or cantaloupe; fruit salad with chunks of melon, grapes and berries, and/or fruit kabobs with the same ingredients. I'll serve a yogurt dip on the side with either of these, and I never have leftovers.

Also veggies and dip always seem to go over well.

I forgot about fruit, I usually always serve it and you're right it ALWAYS goes!
 
I know you said cucumber salad, but I was curious to know what you mixed with it. My aunt makes this really yummy cucumber salad with thinly slice cucumbers and a bunch of things mixed it including sesame seed oil. Everyone LOVES it and it goes very quickly.

Maybe you can still make the same things you always make but try different varieties? Like my mom always makes potato salad with mayo, but a few years ago I tried the potato salad with a more vinegary taste. So good! And it was a pleasant change! And of course the potato salads with more of a mustard taste.

I know some of my friends bring hummus.

Okay. Now I'm hungry! I hope you have fun picnics this year!

I usually just do cukes, tomatoes, onions, with a little bit of sugar and vinegar. I'm going to go to allrecipes or something to get some different variations because I always make the mayo macaroni salad but the Italian style (with oil and vinegar, some pepperoni maybe) is really sooo good.
 
my picnics or parties are all bbq's( real bbq using a smoker).

so I do:

-baked beans with twice smoked kilbasa on the smoker
-ABT's jalapenos stuffed with a cream cheese mixture, wrppaed in caon,a nd smoked
-Armadillo eggs - sausage balls with olives, egg, etc smoked
-green salad with fresh produce
- some sort of fruit salad based on what looks good
- corn on the cob w/ smoked garlic
 
Myfavorites:

Buffalo mozzerella cheese chopped
fresh basil chopped
grape tomatoes halved
virgin olive oil
a few dashes of balsalmic vinegerette YUM:banana:

Another one:
broccoli 2 heads seperated
1 can manderin oranges
cashews 1/2 cup
6 crispy slices of bacon chopped
1/2 cup red onion

Mix 1 cup mayo,1/4 cup sugar, 2 tablespoons vinegar mix and put in salad and refrigerate (I play with the measurements for the dressing)

Spinach salad with sliced strawberries and blueberries, with a strawberry vinegrette (sp?).

Seven layer Mexican dip (If you'll be inside. You don't want the sour cream to get hot.)

Grilled corn or either veggies- zuchinni, squash, etc.

I was just going to post this! DSIL made this a few weeks ago, and it was so good and refreshing! She didn't put blueberries in, and did a poppy seed, sweet vinegarette dressing. Very yummy, and I usually don't like fruit mixed with savory salads.

Other sides we like to do with cookouts:

grilled corn on the cob
fresh bruschetta
fresh fruit
grilled pineapple slices- mmmm!
hummus and pita
fresh veggies and dip
 
We do a hashbrown casserole at almost every cookout.... along with baked beans, pasta salad, chips, fruit, veggies, etc...
 
Quinoa with Black Beans and Tomatoes --- my new favorite summer side dish.

It's easy to make -- cook 1 cup of quinoa (it expands just like rice). Mix with one can of black beans (make sure to rinse them off), cherry tomatoes cut in half and a lot of chopped cilantro. For the dressing mix some olive oil, lemon or lime juice, red wine vinegar, 2 garlic cloves minced, salt, pepper, and red pepper flakes to taste.

It is delicious .... and can sit out for a while because there is no mayo in it.
 
Taco Salad

2 bags Romaine Lettuce (or equivalent of the non bagged)
1 pint cherry tomatoes
1 can (drained) pinto beans
chopped green peppers and onions to taste
Mexican blend shredded cheese
half bag of doritos, crushed
1 large or 2 small bottle(s) Creamy Italian dressing

Mix together and serve immediately. If I'm making ahead of time, I put all ingredients but the chips and dressing in the bowl and add them when I'm ready. It's a family fave!


Fruit with White Chocolate Dip

1 pkg SF/FF White Chocolate Pudding Mix
2 cups skim milk
1 container Lite or SF Cool Whip

Add pudding mix to milk. Whisk for 2 minutes. Add Cool Whip and stir until well blended. Refrigerate at least 2 hours.

Spaghetti Salad
 
I love a layered salad. Here is the recipe:
LAYERED LETTUCE SALAD (7 LAYER)

1 head lettuce, torn up in pieces
1 c. celery, diced
4 hard boiled eggs, diced or sliced
1 (10 oz.) pkg. frozen peas
1/2 c. green pepper, diced
1 med. sweet onion, diced
8 slices bacon, crisp & cut up
2 c. mayonnaise, not salad dressing
2 tbsp. sugar
4 oz. Cheddar cheese, grated (I like swiss)

Put lettuce inlarge bowl. Layer ingredients in order given. Add sugar to mayonnaise and put on top of salad like frosting. Sprinkle with grated cheese. Cover and refrigerate 8 to 12 hours. Garnish with parsley if desired.

Toss when ready to serve.
