What do you put in your turkey stuffing?

Another southern girl......I love dressing! I've already made turkey and dressing once this fall, and can't wait to eat some more next week:)

I cook a wild turkey (courtesy of dh) and reserve the broth and some of the meat. I make the cornbread the night before, and use biscuits leftover from breakfast.

Pan of cornbread
2 or 3 leftover biscuits
A few slices of sandwich bread
can of cream of chicken soup
can of cream of celery soup
chopped onion and bell pepper, sauteed in butter
a few raw eggs
a few boiled eggs, diced
salt and pepper to taste
broth from turkey to make it soupy


served with a can of cranberry sauce of course (NOT whole cranberries)

I think my mother's is better. Dh only eats my dressing, so I guess I do something right:)

****This makes 2 big casseroles, so I freeze one when it is just the 5 of us (dh, me and the 3 kids). I pulled out the frozen dressing last weekend, so I've actually already had dressing several times this year.
 
Why would anybody want to use 'stale' bread????

Anyhow, it's very simple Southern dressing around here.
For those who are not familiar, similar to Cracker Barrel.

Fresh Cornbread, cubed...
Fresh Bread, cubed...
Onions and celery, diced and cooked in a pot of Turkey broth.
Salt
Poultry Seasoning... (I have just discovered Spice Islands brand)

Pour the hot broth/veggie mixture over the cubed cornbread/seasoning mixture
Should be very wet, but not downright soupy...
Fold gently together...
Pour in baking dish(es), and bake at fairly high temperature till it begins to brown nicely.

Yummmm!!!!


I don't do the chopped fruits/nuts/eggs/gizzards... These things are eaten as side dishes or dessert!!!
I also don't really want to eat anything that has been stuffed into a raw animal carcass..... Triple Ewwwww!!!!
 
Why would anybody want to use 'stale' bread????

It's not stale as in... old, almost moldy bread. It's just slightly dried. You can get the same result by cubing it and putting it in a warm oven for an hour. It holds up better in the recipe. It retains more of its texture. I really perfer it over fresh bread in my stuffing.
 

I've never had any with corn bread - being up here in upstate NY.. Would be interesting to see what it tastes like though.. (I do love corn bread..) :goodvibes

It's very tasty!!! You could make a small pan and then tell us about it:rotfl:. I think you would enjoy it along with your Pumpkin pie!:rotfl:
 
My mom makes it the best, but she uses bread cubes (not dried...soft!), butter, celery, onion, salt, pepper and Bell's seasoning. She moistens with a little bit of chicken stock. Mmmmmmm!!!!

My step-grandmother used to make PA Dutch potato filling. Not so much a fan of that....:crazy2:
 
I stuff a 9x13 pan these days instead of the turkey but my recipe is:

2-3 large loafs day old bread, ripped into pieces
onion
celery
stick of margarine
chicken stock
bells seasoning

I use the margarine to sweat the onion and celery, add the bread, moisten along the way with chicken stock, then season with the Bells.

I make it the same way. My mom's recipe. Any chance you are from New England??

Pepperidge Farm herb seasoning mix
Store brand of plain bread cubes
Valaida onions
Celery
Parsley
Season salt
Poultry season
Butter
Eggs
Giblets (in tiny bits)
Stock from cooking giblets

...hope I haven't forgotten anything :laughing:

We've also enjoyed it with sausage, oysters, or fruit, just not our favorite. ;)

This is also where French Toast comes from, they didn't know what to do with stale bread. Fresh bread doesn't absorb the egg as well as somewhat stale bread.

PS, I do make the cornbread the day of, or the night before, but corn bread is completely different texture from regular bread.

YOu should try it, just don't make the mistake of making Jiffy cornbread, it is too sweet. You have to use corn meal. YUMMY.

This is actually funny because I prefer to use Jiffy FOR the sweetness!
