I cook veggies like green beans, potatoes, peppers and onions together with some rosemary and garlic in a little olive oil.
I am a big fan of Newman's dressing.. original and balsamic. Really good on warm green beans, carrots, cauliflower or broccolli.
My kids like RANCH on everything....
Try throwing a bunch of veggies in a pan with a little olive oil, garlic, eggplant, celery, onions, tomatoes, a little italian seasoning, also some black and green olives...mmmm a little like cappinata ( spelling) but just don't cook it too long.
I also make a zuccini/tomato/ onion bake.. just layer thin slices in a 8x8 pan with Italian seasoning and garlic.. you can cover it with bread crumbs and a drizzle of butter or olive oil and some parmesean cheese.. bake/microwave.. yummy... It is the only way Barry will touch "squish" as he so fondly calls any type of squash... silly man!
