What do you cook when you camp?

We are going on our annual camping trip with my inlaws. I would love some new recipes. We will have a campstove and grill.

Campfire potatoes

Take about 4 potatoes and wash them. Cut into bite-size cubes, put in Chopped onion, some salt & pepper, seasoning salt and 3 Tbsp butter. Wrap up in 3 layers of tin foil and lay it down into the coals of the campfire for about an hour. Turn it over & rotate during the time.

Take it out when you are ready for dinner. Set it in the middle of the table, open up the foil and let everyone help themselves!
 
I've never made this myself, but want to try it. It sounds fun.

Taco in a Bag

Fry up a pan of hamburger with a packet(s) of taco seasoning.
Mix up a big bowl of lettuce, tomatoes, onions, jalapeno peppers (whatever you like)
Open up a bunch of individual bags of fritos corn chips.

In each bag of chips place some meat mixture, a handful of salad, and top with shredded cheese and some salsa. Close the bag and shake it up. Grab a plastic fork and go to town on it.
 
I live on SPAMwiches, when camping.
 

Ask over on the camping board and I promise you that you wiil get more than enough help ! :drive:

Our last trip we tried campfire pizza pockets.

Take medium sized pitas, cut them in half and stuff them with pizza sauce, cheese and your favourite fixens. If you have kids, they get a kick out of preparing them.

Wrap the stuffed pitas in tin/aluminum foil and drop them in hot coals in the fire pit. Let them cook at least 30-40 seconds on each side and then unwrap and enjoy!!!

I also do the pocket pizzas often
The can easily be preparred on a propane griddle too


Another favorite is to use the pisbury bread sticks, or cron bread sticks. Flatten them about as flat and you can get them and wrap around a hotdog.
Place on cooking fork and cook over the camp fire

Grilled cheese and tomato soups is one of our traditional first meal. I make the sandwiches ahead of time and grill them on the propane griddle after we set up camp

Another easy first meal is the buy the prepackaged dry chicken noodle soup mix and use a can of chicken for the meat
 
Haven't camped in a bit but steaks, lobster, shrimp, pasta. You know, roughing it stuff.

We called it campfire stew when I was in Scouts.

If you really want to go fancy, you can make really good cobblers in camp style dutch ovens as well.

I'm not getting this at all. You've made tacos essentially. Why not just warm up taco shells (or soft tortillas) and have tacos instead of making things difficult?????

I have to admit I've become a fan of the "foil pack" lately. Even at home. It works great with asparagus,lemon, butter and a droplet of white wine.
 
Just got back from camping actually. If you have electric, bring your crock pot. I threw in some chicken breasts one day and then shredded them and made fajitas (cooked up some peppers and onions). Threw in some country style pork ribs another day then shredded that, added BBQ sauce and had pulled pork sandwiches. Of course we did the standbys as well, hamburgers and hot dogs.

I like coming back to the site after enjoying my day and dinner is cooked.

Mountain pies are a must!!!!!!! http://www.chuckwagondiner.com/pieiron.html I fill mine with pizza sauce, cheese, and any topping that you enjoy on a pizza. You can buy the irons at Walmart or any camping/sporting goods store.

Heck, DH and I often make a fire in our backyard pit and have them for supper.
 
When we camp, we tent camp so I do everything possible to make things easier on myself. I prepare as much BEFORE the trip as possible, and freeze it.

I make a couple banana breads and pumpkin breads for quick breakfasts. I marinate chicken breasts.

I cook up taco meat. To this I add canned kidney beans, chilis, canned corn, diced tomatoes or salso. We eat it with corn chips.

I chop onions and peppers for sausage.

Pulled pork freezes well.

Cheese is shredded in advance. I try to prep as much as possible at home and freeze.

I also buy egg beaters for omlets, those freeze well. Oh- try to cook eggs in a ziplock bag. Pour it into the bag with onions, cheese, whatever. Put into a pot of boiling water, squoosh once or twice till cooked. No messy pans.

I just know I don't want to be chopping and preparing out in the woods. It seems that when camping you are always either cooking or cleaning up.

Also, all kinds of hobo pies. Tuna and cheese. Cherries with chocolate. Pizza sauce, cheese and pepperoni. Apples and cinnamon.

Sorry but I camp with water and electric. And ya know what, I bring my TV for weather reports. Where I was camping last week a little girl was killed in a flash flood 1/2 a mile away. We just had tornados too. I want to hear if something bad is coming my way so I can get somewhere safe if need be.

It makes things easier.
No plates, no shells to heat up , no worrying about trying to keep the toppings in the taco etc How is that difficult?
