What do you cook at the Fort?

This will be our first trip to the Fort and only my second time camping as an adult. We are going to rent a camper and stay at the Fort. I planned to make some meals at the camper. I have steaks, pasta and meatballs, and tacos on my list.

what do you guys cook? I know I will precook a lot like the taco meat and the meatballs/sauce.
 
- Marinated chicken grilled.
- Prepackaged rice dishes like the ones from Lipton make an easy side.
- Grilled vegetables like peppers can go right on the grill
- Vegetables like green beans can be done in a foil packet, and potatoes can too. (Microwave the sliced potatoes a little bit ahead of time to ensure quicker cooking on the grill.)
- A foil pack we love is frozen hash browns, a can of cream of mushroom soup, fat free sour cream, and about 1 cup of cheese. Grease the tin foil. Grill on low. You can add mushrooms. The cream of soup is not overpowering in this.
- Pasta salad with leftover grilled chicken, cubes of cheese and tons of vegetables. Make in the morning and it'll be all set when you come home. Or slice and dice the night before and assemble when you come back from the parks.
- Keep one night for leftovers, stuff you've brought home from restaurant dinners, and leftovers from what you have made. You'll want to clean out that fridge before you go. We've found that when you lay all the leftovers out, and the kids get to pick and choose they actually enjoy leftover night. This is also a great night to go out for dessert!
 
I like doing pulled pork BBQ in the crock pot...put in a pork loin, add your favorite BBQ sauce and a bit of water or apple juice, come back in 8 hours and you have dinner! we also like to make stew in the crock pot, nice to come back to the campsite to have a nice hot meal ready to go.

We have done chili in the crock pot.
We bring a fryer so we have done chicken wings, French fries and onion rings.
We camp at Thanksgiving so of course we deep fry a turkey.

We'll be there in less than 2 weeks, so I've been working on our menu. I have precooked pulled pork, taco meat, meatballs and sauce, and casserole to throw in the crockpot (lined with a crockpot liner) on low in the mornings so we can come back to dinner already prepared. We plan on having steak one night and I haven't decided yet if we'll just nuke some potatoes in the microwave or if I'll wrap them in foil and "bake" them on low in the crockpot all day. We also plan on marinating and grilling some chicken - having some boxed stuffing and veggies on the side and have some kielbasa and ham steak other nights.

My plan has been to prep certain dishes in advance and freeze them knowing it will take a day or two for them to defrost and even when defrosted, they are items that will "keep" for 4-5 days in the fridge. Things like the ham steak and kielbasa will also keep easily until we prepare them. Side dishes are a mix of boxed items like the stuffing, canned and frozen veggies, and fresh veggies in the form of salad - we are a big salad eating family and it's so easy to buy bagged salad mix and add some peppers, tomato, etc.
 
We tend to eat lighter because the calorie count is up the rest of the meals/snacks. And it makes it ever on mom :)

We do pasta at least once, veggie burgers and baked beans, sandwiches for dinner night with a light coleslaw, baked potato " bar" with salad at least once, rice and beans, soup and salad, and " breakfast for dinner" at least once? Grilled veggies and salads are on the side , depending on what needs to be used up- I normally have a batch of frozen chili, ratatouille, and soup in the freezer on any trip and the kiddos always know where the peanut butter and jelly is if they don' t want what is served..... Oh and don't forget to leave a night or two for leftovers.....
 
Not just at Disney, but any time camping our meals are usually not as complicated as they are at home. The meals are usually grilled, premade or only items that need reheating in the microwave, stove or oven, and crock pot based.


Even with that, we have premade some great cassarols and lasagna that we reheat in the oven. The only thing I have learned from all of my friends is that intricate cooking in an RV is doable, but not preferred on vacation.
 
When we camp at Disney we eat pretty regular meals. Since we have the RV we bring along our normal foods and appliances (waffle makers, vitamix, etc...) Here's what's on our meal list for this trip:
Campsite Nachos, Chili, Chicken Cacciatore, burgers/brats, pulled pork, chicken/steak in foil w/ veggies, tacos, chicken wings, stew, lasagna in slow cooker

Breakfast:
Yogurts, smoothies, oatmeal, omelets, waffles, pancakes

Lunch:
Deli meats, cheeses, yogurts, quesadillas, veggies/fruit with dips, soups, leftovers

Many of the dinners can cook in the slow cooker, which is definitely a time saver. Chopped meat we'll precook, but most of the rest is cooked on site. We'll usually bring along some soups for lunches when we're at the fort and those will be precooked and frozen.
 
It depends on what time of the year we are camping. We will be down in a week or so and with the heat, no one will want a "hot" meal or a heavy meal... especially after being at the parks all day. We also snack all day so we aren't usually all that hungry for a full blown out meal. We do cook a pretty big breakfast and that pretty much keeps us going for the day with snacks. If we stay at FW all day... we may cook out steak/chicken with a salad. We've never felt comfortable leaving a crock pot on while we are gone all day. :confused3
 
What we cook at The Fort, let's see . . .
. . . hobo stew
. . . pulled pork
. . . steak
. . . corn-on-the-cob
. . . pork and beans
. . . homemade chili
. . . eggs, bacon, ham, potatoes for breakfast
. . . with a roaring fire, we do deep-fried ice cream
. . . deli meats, but only if fresh sliced and not pre-packaged
. . . homemade yeast rolls (yum, yum, yum!)

NOTE: We used to do a lettuce salad, but I can't eat lettuce
any more. We used to like burgers, but they seem "too plain".
 
This thread is making me hungry. Ready for another trip to Publix! :-)

Might want to get a GAG or pizza at Trails End, or a Southern Smothered Hot Dog at the Meadows pool snack bar.
 
Food we cook at the fort:

Grilled chicken and shrimp Caesar salad;
Pot roast and fixings (can cook all day in the crockpot);
Some type of pasta, usually an alfredo sauce that cooked all day in the crockpot;
Mexican rice (It's a Publix Apron meal that my DD13 loves to cook herself..super easy and good :thumbsup2);
Salmon on the grill, mixed veggies that I stir fry (bok choy, mixed mushrooms, bean sprouts, etc. that I prepped at home and put in a ziplock) and coconut rice (rice cooked all day in the crockpot);
A huge pot of Cowboy beans (bacon, ham, onion, bell pepper, several kinds of beans, maple syrup, bbq sauce...adds up to heaven in your mouth!)
Stuffed baked potatoes (again...crockpot, lol).

Obviously I use the crockpot a lot. lol We eat a TS for lunch usually and have something not super heavy at camp for dinner. I do like others and cook most of my meats at one time (like the chicken breasts &/or flat iron steak), usually the night I do salmon, and save them in the fridge. I prep everything at home and freeze the meats so they get cooked as they thaw. If we are going in a cooler month, I will freeze soup base (don't freeze the noodles if making a chicken noodle...bluck :scared:) and we will have soup and grilled cheese sandwiches one night, too.
 
My parents and I are starting to think of what we are going to make during our trip at FW. I know we are going to need a meal for Christmas Day evening. I also know we are going to make some hot dogs. I know that we will be doing a grocery store run once my parents get there (they are arriving a day after I get there).
 
We love camping at the Fort. We are one of those families who during most of our trips never make it to any of the parks. We cook burgers, hot dogs, fish, chicken with usually grilled veggies on side, we make sandwiches with the camping sandwich maker, pan cakes, eggs,smores for dessert, camping pop corn for snack and for our next trip we are planing to take crock pot. Our kids grab couple lunches from the snack bar by the pool and they think it is the best thing ever! We would eat out once or twice but definitelly hit Bongo last evening as a tradition.
