What do we HAVE to eat?

I second (third? fourth?) the recommendation for Blue Bayou. Great food and so fun.

Carnation Cafe is technically TS, but as someone said, it's CS prices, doesn't take long, and the food is GREAT. Their Mickey waffles are the best I've had (and we've had them at WDW and DLR in multiple locations).

I second the recommendations for Plaza Inn fried chicken (though it's not as good as 50s Prime Time), and corn dogs from the cart.

Royal Street Veranda (a little window in New Orleans Square by the Pirates exit/Blue Bayou) has AMAZING gumbo. SO good.

Hungry Bear Restaurant has been mentioned. It's great, and you can't beat the view - right over the water.

We have always liked Pizza Port's pasta and salads, especially the caesar. Very good.

I also second or third the recommendation for Jolly Holiday. If you like coconut, the matterhorn macaroon is AMAZING. Yum.

I realized all I've mentioned is at DL....I like the food better there. Pacific Wharf at DCA is good. Also, Whitewater Snacks in the Grand Californian is great. You can exit the park through the Grand and walk around back by the pool - it's a very quick walk. Their food is excellent and it's always nice and quiet back there. We LOVE their nachos - yum.
 
You definitely MUST try to Lobster Nachos at Cove Bar and Mickey Beignets at Mint Julep.

I would also recommend the World of Color dinner at Ariel's Grotto. The quality and amount of food they give you is amazing.

My husband and I split a Monte Cristo and loved it (order it with the pommes frites (I think that's how it's spelled?) and it's definitely more than enough to share.

Another treat I don't think anyone mentioned is the little cart by Fantasy Faire - Maurice's Treats. I fell in love with the Boysen Apple Freeze and the chocolate or strawberry twist. It's the only thing I had twice during our trip because I just had to have them both a second time.
 
My all time favorite favorite meal is the Plaza Inn Fried Chicken platter. soooo good, and imo a must have when visiting DL!
Also hungry bear has a great fried green tomato sandwich (hope it's still on the menu)
Cafe Orleans has delicious gumbo.
Rancho Del Zocalo has filling burritos, large portion.
For DCA, I would recommend the bread bowls can't go wrong with those at Pacific Wharf. Other than that, I don't really eat at DCA.
At DTD, Jazz Kitchen express for breakfast beignets, delicious.
For snacks:
1) pretzels
2)Dole whips
3)corn dogs (really a meal in itself)
4)caramel apples

No one mentioned (I think) white water snacks, I myself haven't tried it, but it has good reviews of their nachos: large portion, filling. They are located in the GCH, near the DCA hotel entrance.
