what do u all serve for easter dinner?

Hi, I'm hosting easter dinner this year! I do not want to serve ham (I served ham for both christmas and thanksgiving along with turkey). What other meals do people serve on ester other than the usual ham or turkey dinner? Thanks

I was thinking maybe raost beef...but my husbands family only eats meat that is well done (they will not eat anything pink) and isnt roast beef usually served a little pink? Thanks

I usually do lamb, asparagus, some kind of potato dish, and a lemony dessert.

A crown roast of pork is very elegant, and traditionally served "well done". Also good is a leg-of-lamb roast.

We don't really have a standard Easter dinner. Last year we had: shrimp cocktail, chicken cordon bleu and lasagne both, veggies, salad and rolls. Good luck! (Not sure what the meal is this year yet!)

Sometimes my big extended family gets together for brunch instead of dinner.

We've also done bbq/ picnic style late lunch early dinner, when the weather is nice.

Either of these have endless menu possibilities.

My mother always made lamb, but we don't care for it, so if I don't make ham, I make a pork roast with some type of potato, asparagus with Bernaise sauce, salad, homemade rolls and a spring type dessert.

This year we are doing something different, less formal than in previous years. We are doing ribs on the charcoal grill (with an incredible Irish barbecue sauce). We'll have some fish kebabs for the non meat eaters that are invited. We'll be adding greens, corn souffle, potato salad, chocolate souffle, creme anglais with strawberries, cassatta, and some sort of homemade roll or bread... at least that's the beginning of the menu. We tend to add as we go along and always have too much.

I'm hoping to have the dinner on the screened in lanai. We'll see.

When I was still cooking for Easter, my menu consisted of:

Baked ham - with pineapple slices and cherries on top
Mashed potatoes
Peas
Cole slaw (my late DH's "secret" recipe)
Broccoli and cauliflower with cheese sauce
Cottage cheese
Cranberry sauce
Deviled eggs
Rolls

and whatever I decided to make for dessert on any given year..

The only definite is our dessert. I always make a jello poke cake w/ yellow cake and lime jello, and whipped cream/lemon pudding icing. I have had it every Easter since I was maybe 5 or 6--going on 40 years now. The only time we eat it all year.

This year, my DD will be recovering from a tonsillectomy and sinus surgery. I will probably decided on the menu just ahead of time. It will depend on how much she feels like eating. I'm not going to make a huge dinner for her to sit and watch.

This year I'm having funfetti cupcakes and chick & egg shaped cookies for the little ones. Haven't decided on what to have for the adults yet. I might leave it at the cupcakes & cookies for them too.

We will be eating dinner in New Orleans so whatever the restaurant is serving is it for this year. But we have had holiday ham dinner, grilled chicken and ribs, seafood meals, or fried chicken picnics; just depending on the plans for the day, everyone's moods and the weather.

Not sure. it'll just be dbf and i and a few friends. probably just a potluck type of deal.

Last year was the first year in our house; and my mom was here. She wanted prime rib so we made a trip to Costco and got a 7 pound roast for about $45 and she flipped for it. We also had mashed potatoes, asparagus, corn and dinner rolls. It was REALLY good. The pot pie the next day with the leftovers was also really good.

I did brunch one year and made several quiches-seafood quiche, tomato and basil quiche, and two others I can't remember.
