We wanted to try a dinner show this trip, this will be our first one. There will be 2 adults and a little princess age 7.
What would you recommend and is there a difference in seating. Also is there any DVC or annual pass discounts?

Hoop De Doo no question and yes, pay the extra few dollars for tier 1 seating. It's a great time and a Disney classic- the show has been there for decades and is as popular as ever. Good food and as a bonus beer and wine is included for adults. 10% discount for AP/DVC.

For on property I'd say Hoop as well. It's been a while since I looked at the discounts but it's normally only Tier 2/3 and often only the late show with DVC. We've done Tier I & 2 and the last time it was tier 2 because we were using the DP. It's fun and corny with decent good. As dinner shows go it's good but not great but it is worth doing if you haven't.
I am inclined to tell you to go to the Luau as your first dinner show. Only because if you go to HDD first, you will be disappointed then when you go to the Luau.

Luau is boring and we didn't care for the seating or the food. Hoop de Doo was loads of fun. Food was not too bad and most people will enjoy it. We did enjoy Mickey's Backyard Barbeque when we did that years ago. But we haven't done any of them in 10-12 years or more. I know they have changed some.
Hoop Dee Doo Review is amazing. My curmudgeonly MIL describes it as “the best thing she has been to in her life.” My 7 year old was in hysterics the whole time. We also did Backyard BBQ a few years ago when my son was maybe 5. We enjoyed that as well. If your daughter still enjoys dancing with characters, maybe do BBQ now, and save Hoop De doo for next.
Hoop Dee Doo is possibly the longest, continuous running stage show in the US ever. If you have not seen it, it is definitely a go. Category seating and category 1 is most expensive and best but other categories are still decent.
The luau is also worth a try, particularly now, since they have a new person who does the finishing climax act of dancing with fire batons. The performer they have now is just incredible, the best I have ever seen at any luau show anywhere. His entire act is full of tension because you really believe he is going to burn himself to death. It also has category seating with Category 1 being front and center and the best but other categories still decent.
The one I would recommend avoiding is Mickey's Backyard Barbecue, which is mainly an outdoor character meet with some western dancing in an open pavilion in the woods, and its problem is that it often has lots of mosquitos and seating is in uncomfortable park-like benches. It has two categories of seating with 1 being toward front and center.
As to discounts for the three shows: DVC none, AP 10% for any show, TIW 20% but for Hoop Dee Doo only the 8:30 show.
My vote is Hoop-Dee-Doo Musical Review! Tier 1 if possible. Great show for the family. Fun, silly, corny and very entertaining. I like the BBQ family style dinner as well. While at Fort Wilderness, if you have time, check out Tri-Circle-D Ranch, Pony Rides, Wagon Rides and Horse-drawn Carriage Rides.
