What did you bake today ? OK if not from scratch

Tried to bake a pecan pie for the first time ever. No go. I wound up with only 2 eggs (called for 3), and it turned out terribly. We didn't buy eggs yesterday cause we had 11 in a fairly new dozen tin. But we used 8 for breakfast burritos, one in the corn casserole and had 2 left for the pie. It was awful. Just threw it out, lol. We also baked green bean casserole as part of the Thanksgiving dinner.
Baking can be finicky. I'll bet the pie would have been great if you had 3 eggs in it. It sounds like everything else turned out.
 
I made the desserts for thanksgiving. I made a blueberry, apple crumb, and chocolate pies. I also made caramel apple cheese bars.

I remember to grab pictures of two of the pies (made the pies in disposable pans so I didn’t have to get my pie plates back)

I’m starting my holiday baking. First batch of cookie dough is chilling.
 

We started a tradition of cookie baking decades ago. Four generations of women and girls would gather for a day of marathon cookie baking. We would churn out so many different kinds and fill the dining room table with cookies. Everyone took multiple tins of cookies home at the end.

Grandma and Mom are gone now but there's a new generation stepping up and learning how to make those cookies. We've set a date and made our lists. I'll be shopping this week for ingredients.

Happy to share! They are really easy to make because you use a box cake mix. You can make it with any flavor cake mix.

1 stick butter (at room temperature)
1 block cream cheese
1 egg
1 teaspoon vanilla
1 box chocolate cake

Mix 1 stick room temperature butter with 1 block of cream cheese until well mixed. Mix in the egg then mix in the vanilla. Once everything is well blended add the cake mix.

Chill for 1 hour

Roll into 1 inch balls then roll in confectionery sugar.

Bake 350 for 10 minutes.
 
For Thanksgiving, I baked a chocolate covered cherry pie, sweet potato casserole and pumpkin chocolate chip mini muffins.
Today I knocked out coconut macaroons which I’ll drizzle with chocolate and butter cookies. I only got pics of the cherry pie and macaroons. Tomorrow I’ll figure out another Christmas cookie to get baked and into the freezer.

Just dinner that will go into the oven. Hopefully get a batch of some kind of cookies made tomorrow, but have to clean downstairs and get a couple more boxes of decorations up.
 
I was planning to get one kind of cookie done today but had a canning situation which resulted in me deep cleaning the kitchen. Tomorrow is another day.
