What days to NOT do a Disney park?

My upcoming trip will be 10 days long (8 full days). We'll be in Disney from Mon. May 23 to Wed. June 1 (staying at a WDW resort) and plan to spend 2 or 3 days at Sea World/Universal. My question is which days are best to NOT be at WDW? (keep in mind that the weekend we are there is also a Star Wars Weekend). Any help would be appreciated!

I've always been told that the weekends are the busiest in Disney. I think that's because the "locals" come.
