What counter services do you use in the summer?

Main St Bakery at MK

Sunshine Seasons at Epcot
Electric Umbrella at Epcot (I never use this one, regardless - blech)
Lotus Blossom at Epcot/China
Liberty Inn at Epcot/US
Sommerfest at Epcot/Germany - not technically enclosed indoors, but located well under an overhang and received a/c from the Oktoberfest area so it's not hot under there
Tangerine Cafe at Epcot/Morocco
Yakitori House at Epcot/Japan - very, very limited seating indoors, though

Backlot Express at DHS
ABC Commissary at DHS (another one I never use, worst. CS. ever.)

MK - I love Columbia Harbour House - the trick is to go during an "off" meal time. Like 2:00 - and get a seat upstairs in the area that bridges over the walkway to Fantasyland. It is so quiet, relaxing, nice and cool, and enjoyable! I love watching all the activity going on below!

Epcot - I love Sunshine Seasons, but it is so crazy busy during lunch time.

DHS - I honestly do not like any counter service here.

AK - Pizzafari!

Love Columbia Harbour House. We go at 11:30 before it starts to get packed and get a nice seat in the air conditioning. Feels so great after a long morning in the park.

Also vote me for Columbia Harbour House at MK and going upstairs where it is cooler and less crowded, I love watching out the window and people watch while everyone else finishes eating. Warning thou once you sit down in the nice cool quiet area and have a full belly you don't want to get up and move,

At Ak I would also go the Pizzasafarie. Hs the backlot express but go before the meal crowd or after. And at Epcot we always enjoy the Sunshine Seasons, it can get crowded and loud in there so beware, we usually just eat our way around the world getting one meal to share, then off to the gift shops, pictures, and then off to the next country. This way you may get hot but then your up and cooled off shopping.

We enjoyed Pecos Bill at MK and Pizzafari at AK. For Epcot and DHS we did restaurants (Biergarten and SciFi). It was nice to have a planned indoor lunch break in the ac.

Add another vote for Columbia Harbour House! Even during the crowded season at the busiest mealtimes, I have never had trouble finding a table here. The restaurant is air conditioned, and the upstairs section provides lovely views of the Magic Kingdom park below.

I also enjoy Sunshine Seasons, but it gets crazy down there sometimes. Between diners and people trying to squeeze into the massive Soarin' line, The Land pavilion can double as a mosh pit.
