What Costco foods would work for a luau?

Not from Costco - but how about Hawaiian pizza from a local pizza place - Domino's, Papa Murphy's, etc. - VERY EASY, a phone call. In addition I would do Costco meatballs in teriyaki sauce, shrimp platter, frozen potstickers, pineapple, the Asian salad kit from Costco, and King's Hawaiian rolls.

For dessert - pineapple upside down cake. Have I seen this at Costco - I feel like I have?

I've experienced Hawaiians specifically disavowing the ham and pineapple pizza as something some white guy thought up. I heard of one pizza place in Honolulu that does have ham and pineapple on the menu, but they basically says it's for mainland tourists. They call it "The Haole" which is frankly an insult directed at white people.

Depends on the location. The main problem with pineapples (which Costco does carry) is that they might not be ripe. If you really want to get into it, the ones I've seen have Kona Brewing beers, although they're actually brewed and bottled in Colorado. If you really want to get in the spirit, see if you can find Primo.

Nope. Kona Beers are not brewed in Colorado. However, because I like to make sure I get my facts correct once in a while I went and looked at one of DH's Kona beers. It says the Mainland Beer is produced and bottled in Portland, Oregon, Woodinville, Washington, Memphis, Tennessee, and Portsmouth, New Hampshire, as part of its partnership with Craft Brew Alliance Inc.
