What can I do with all this leftover pulled pork?

2 of my favorite pork dishes are made in the crockpot. I use boneless pork loin in my recipes. But using already cooked shredded pork should adapt well since my pork gets shredded anyway. The first dish is pork and sauerkraut. A 2 lb boneless pork loin and a jar of sauerkraut goes into the crockpot. Sometimes I'll add a bag of baby carrots too. If I need more liquid, I'll add some chicken stock/broth. Since the pork you have is already cooked, you won't need to cook as long. Only an hour or two, to heat through and to let the flavors meld. Serve over mashed potatoes or brown butter egg noodles.

The second recipe is for pork carnitas. Basically, a pork taco.

2 lb pork loin
4 minced garlic cloves
1/3 c chopped cilantro leaves
1 lg chopped onion
1 1/2 tsp oregano
1 tsp orange zest
3/4 tsp salt
1/4 tsp red pepper flakes
1 can(14.5 oz) chicken or beef broth

Just add all ingredients into the crockpot and cook on high for 3 hours. Serve with all the taco sides. Plus, I make a super easy chipotle cream sauce. I use the canned chipotle in adobo sauce. Chop 2-3 chipotles, add to 1 cup of sour cream, mix. I use this instead of salsa because it is spicy and cooling at the same time. A variation would be to make a french dip style sandwich with the pork carnitas because there is a lot of liquid in it. Using steak rolls, spread some of the chipotle cream, and add the shredded pork. Serve with a small cup of the cooking liquid as a dip.

I cook my pulled pork with spices and bbq sauce already. One time when I had a ton left, I made pizzas. I slathered extra bbq sauce on the dough, piled on the pork and covered in mozzerella. It was pretty good!!!
 

You can get away with refreezing it once. Separate it into portions for each upcoming meal first.

Next time don't thaw the whole thing when you want (i.e. each time you want) to use just a little. Instead cut off the portion for this meal using a saw (yes, the kind of saw used to cut wood).
 
Take the pork and make some fresh sauce. Make a nice zesty pork sauce for pasta. Do you have a Ciao Baby near you? Makes for a nice meal. I know I hate pasta without a meat.
 
salad - I always get the pulled pork salad when we eat at Famous Dave's. It's really good!

Depending on your sauce, you can do a variant of Shepherd's Pie--add peas and carrots and top with mashed spuds. Or, make up macaroni and cheese and add the pork.
 
A casserole and quesadillas are things that I would do with it. My mother in law fries hers really crispy (not burnt) and keeps it in the fridge and they eat that over rice- if you do it right it will last in the fridge for about 2 weeks! You can even try to make pork fried rice with it if you have any left over rice?
 
We do either pulled pork tacos -or- pulled pork baked potatoes with sour cream/chesse/salsa/etc.
 
It makes a great breakfast burrito when you cook it with some potatos and scrambled eggs, and onions.
 
I had pulled pork nachos at a baseball game the other night -- fabulous! It was just pulled pork with some bbq sauce over nacho chips with melted cheese on the top. Delish!

In your case, I 'd whip up some pork nachos tonight and divide the rest of the pork up into portions and re-freeze it so you don't have to eat pork all week!

make a cheses sauce on top of stove by cooking milk. cheese (we use velveta) and cream cheese
pour over pork and hash browns and top with a crushed chips/fried onions
bake till heated thru

cook in large pot
cabbage,,potatoes..carrots,,celery,,onions..and any other veggie you want to add than add chicken or beef broth and pork(shredded) simmer till heated
serve topped with cheese and bread sticks.

pork ,,hash browns,, onions,,,green peppers cook in skillet till done and serve with eggs over or you could add scrambled eggs in while cooking top with sour cream
