What are you doing with your Eggs?

For anyone who boiled and colored Easter eggs...

Are you eating them as is, or are you making egg salad sandwiches, or adding them to potato salad...or what?
 
...or am I the only one who has some left over? lol
 
i am 100% wastefull in this department. no one here eats hardboiled eggs. but i bought and dyed eggs. so i will end up throwing them out on garbage day. i know, the shame! but DS had fun coloring them and that is what mattered.
 
Between school, grandmother's and home, we have 18 eggs. DS has said he does NOT want his dad to eat them. :confused: We are not actually sure why. DH is the only one that will eat them, and I think he may grab a few, he certainly is not going to eat a dozen and a half of eggs.
 

We're throwing ours away, too. They were out of the refigerator for quite a while, because we hid them many times. Also, a lot of them got cracked. I'd rather be safe than sorry, but now I really want an egg salad sandwich.:D

then going on a cheerios diet....LOL
 
That's why we quit dying eggs. I mean, if you don't keep them refrigerate then you should not eat them, right? And we LIKE hard boiled eggs and egg salad. So it just seemed too wasteful. Plus the kids are teens now. And to tell you the truth, I think we only dyed them once or twice.
 
Well, we dyed a dozen eggs. DS (5) and DD(3) both like to eat them sliced with salt and pepper, so I am sure they'll eat a couple; then I'll make egg-salad for myself. The remaining few will be used to top pancit which I am making as a suprise for DH. (pancit is a filipino noodle dish that DH loves; I have never made it before, but I asked MIL for the recipe and I am going to give it a shot!)

My problem with the eggs is that I have to keep the kids from eating them all at once. We only colored a dozen because of this. They'll be having some for dinner tonight with leftover ham since they forgot about them for breakfast this morning.
 
I'm still sitting on mine Wishy, patiently waiting for them to hatch. ;)
 
I wish that I had some eggs to do something with. DD Sarah is disappointed that we didn't color any eggs this year. And I'm equally disappointed because that means that there won't be any egg salad for me to devour. Since my MIL is coming up this week for a visit and since she likes egg salad as much as I do, perhaps we can do some post-Easter egg coloring to satisify all of us.
 
Mine were turned into deviled eggs for our dinner party yesterday. All but 2 were eaten. Yum!!!
 
Towncrier, that sounds like a good idea.
And, you can probably get an egg coloring kit for a quarter today!:Pinkbounc
 
Our Family Tradition is Easter Eve to boil the eggs...the amount has grown over the years...this year was 18. Anyway after they are boiled I take the crayon that came with the Pez set about upteen years ago (haven't seen one in years) and write a family members name on each one. The boys then color the eggs and we don't know who has what color until the name appears. On Easter morning after finding the eggs we put them in the egg carton and proceed to the family stops...grandma's, auntie's, nana's etc and give all the people their own personal egg! This works out great! we are left with 5 eggs....4 for us 1 for the dog!! I make egg salad and wah lah! eggs gone!
 
I ate 1 for breakfast this morning, sliced with salt and pepper.

DS #1 will have a couple for breakfast tomorrow.

Then, I will either make deviled eggs or egg salad out of the rest.
 
We'll have a few for breakfast or packed in the kids lunches. What is left, I'll turn into deviled eggs in a couple of days. We did 2 dozen eggs so it takes a little while to eat them up unless I devil them. Then they go like hotcakes!
 
DD ate a couple for breakfast and the other 8 will become egg salad and be sent back to college with my DS.
