When we went on our land/sea vacation in 2000, my favorite things were at Palo. The sea bass there was simply out of this world, and for dessert, our waiter brought me chocolate souffle laced with the Italian liqueur, Frangelico. I don't know if it was something special he did just for me or if any of this is on the menu anymore, but I thought I had died and gone to heaven!! Just scrumptious. I had never had sea bass before, and totally loved it.

Our waiter was Luca, and before we ordered, he quizzed each of us on what we liked/didn't like to make his recommendations, and turns out, Luca and I had the same tastes in food. He was very animated and funny and really knew a lot about food. We got such a bang out of him! Turns out, he had worked as a head chef in Italy before coming to DCL. So he said to DH and me (in a very thick Italian accent) "Tonight I manage your stomachs." We giggled. He picked out everything for each of us, and I am not one to normally let a waiter do that, but he was right on the money, for me especially. He was just so darned charming, we couldn't say no, and he just got so tickled doing it for us, especially when he saw our reactions. I even let him pick out my wine, and it was perfect.

It was an incredible meal, and probably the best one I've ever had. These kinds of things make wonderful trip memories.
