What’s for Dinner Tonight?

What brand of cauliflower rice do you all use? I tried it once & it was terrible. The garbage disposal ate well that night. I think DH bought cheesy cauliflower rice or something like that. I don't want to make that mistake again.
I mix the cauliflower rice with regular rice to bulk up my serving for less calories/carbs. It's the only way I can eat the stuff. I think it's nasty all on its own.

I made pizza last night because I have been craving pizza so bad, but I knew ordering a pizza would likely lead to stomach issues because I am on a GLP1 and high fat foods absolutely don't sit well. So I made my own and topped it with turkey pepperoni, banana peppers, onions, feta, and mozzarella. It totally hit the spot.

Good tip, thanks. I'll try that next time.

Sorry, just saw this question now. I buy just plain frozen cauliflower rice that I cook in the microwave. I like Birds Eye or Green Giant the best. I find the kind from BJs is still cold in the suggested cook time so we always have to cook it more. Great Value brand seems to be okay. We only use cauliflower rice with something that has a sauce or lots of flavorings. I've also made it into Spanish rice by adding salsa and seasonings and fried rice by adding ginger, garlic, egg and soy sauce.

Edit to add: as others have said I wouldn't ever eat it just plain and it is a good way to stretch regular rice.

Today is DH's birthday so he gets to pick the menu. I made black magic chocolate cake from scratch and he requested coconut-pecan frosting. He made homemade peanut butter fudge swirl ice cream. For dinner we're having meatloaf, mashed potatoes and roasted carrots. Our sons are coming home to celebrate later today.

Happy birthday to him
