Today was our Volcano Bay day. For lunch, we went to Kohola Reef Restaurant and Social Club. I had the Lava Chicken Sandwich (I asked for no bacon) with fries and my boyfriend had a bacon cheeseburger.

Lava Chicken Sandwich Combo -
crispy spiced chicken thigh, bacon, sliced jalapeños, sriracha mayo, island slaw, coconut bread, with fries

We went to Orchid Court Lounge at Royal Pacific Resort for dinner. We each had a bowl of miso soup and we split four sushi rolls.


PHILADELPHIA ROLL -
Salmon, cream cheese, avocado

SPICY TUNA ROLL -
Tuna tossed with sesame, red tobiko, sriracha, chili pepper, avocado

DYNAMITE ROLL -
Tuna, yellowtail, topped with shrimp, avocado, eel sauce, spicy mayo

CRAB RANGOON ROLL -
Crab mix, cream cheese, avocado, bell pepper, topped with smoked salmon, masago, tempura flakes, eel sauce

It was also our anniversary so they gave us a card and balloons and a dessert that I don't know the name of. It was like a really creamy cheesecake with a layer of powdered chocolate and whipped cream on top. It was delicious!

Today was our last day at Universal. We went to Epic again. For lunch, we went to Das Stakehaus. We both got the Carved Steak Stake.

Carved Staked Steak -
carved strip steak served medium with a hint of blood, charred green onion mashed potatoes, roasted baby carrots, acorn squash, crispy maitake mushrooms with a bloody jus


For dinner, we went to Oak and Star Tavern. We both got brisket with a side of mac and cheese. It also came with some pickles and cornbread.

Happy Birthday, @LoveDaisy!!

Thursday night the LittleGuy came for his weekly sleepover. We had baked cod (lemon/ritz cracker topping), rice-a-roni, and mixed frozen veg (kicked up a notch- I really don't like frozen veggies- with some butter and smoked paprika).

Friday night we went to our friends' home, so dinner was chicken enchiladas (white sauce) and salad.

I think tonight I'll pull a steak out of the freezer and served baked potatoes and bagged salad. Our grocery chain had all varieties of bagged salad at 2/$5 this week so I bought several. Not sure about tomorrow, but there's leftover cod, scallops, and shrimp in the freezer so I might make a seafood chowder.

DS went out of town for a concert, so it's just DH & me tonight. He talked me into ordering from his favorite childhood restaurant. We're sharing 5 piece chicken tenders w/ gravy for dipping. He's having mashed potatoes w/ gravy, fried okra & a biscuit with his. I'll have mashed potatoes with mine.

We’re planning on leftover Quattro Formaggi pizza with a salad in our hotel room in Santee SC tonight.

We used to stop there as our stopping point for driving to WDW from Philly when I was younger with my parents

I worked last night, my usual double shift, dinner was a microwave Ramen noodle soup (I drain the broth and just eat the noodles), LOL I only had time to eat half of it.

We ordered pizza tonight. Chicken Bacon Ranch, cheese breadsticks and a salad

Tomorrow we are going to the Chinese Buffet with the family. My SIL's MIL had a birthday recently and we are celebrating, she requested to go there. My SIL and BIL just came back from a 12 night cruise last night. They are picking her up from the NH where she was for respite care tomorrow (Coincidently the one where my SIL and I both work), she needs 24 hour care and they are 2 of her caregivers that cover a lot of her hours so the hired ones wouldn't have been able to cover all of it.
