Loaded baked potatoes using leftover chili out of the freezer. We're hoping to finally head toward North Carolina tomorrow, so we don't want leftovers.

Last night was one-pot mac and cheese. Not my favorite but I wanted something cheesy and easy, so this worked. We also used up a bag of chicken nuggets from Trader Joe's. The Little Guy was here for dinner and overnight (school vacation week) and he cheered when I told him what dinner was! We also had green beans for a smidge of health!

Not sure about tonight. We leave Saturday morning for 4 days for a funeral (in Florida, wehre it'll be in the mid-50s to mid-60s... I was SO hoping for really nice, warm weather) so will work on leftover quiche, leftover mac-n-cheese, so I don't have to throw stuff out before we leave.

Sorry for your loss. I hope the trip goes well.

I got out in time tonight but I have some calls later with s collaborator on a project in Asia so I grabbed takeout from Bears BBQ. DH was happy. I had a salad and cornbread with honey butter.

I'm making pulled pork bbq sandwiches. My granddaughter is roasting potatoes in the air fryer.

I made some linguini and red sauce (Prego, LOL) and crescent rolls. We also had tossed salad.

Unfortunately, DH's job is delaying our trip for a few more days, so we'll be cooking tonight. DH is having a cheeseburger & fries. I'm having a grilled burger patty w/ sauteed mushrooms, onions & A-1 sauce. We also have some leftover caprese salad that we can have with it.

The weather wasn’t great today so I worked from home. We had rain, freezing rain, snow, and sleet. I’m ready for winter to be done but apparently it’s not ready. Local news is saying another 6-12 inches of snow Sunday into Monday.

I made pesto, burrata, tomato crostini for lunch and chicken Caesar wraps with fries for dinner.

Hey ya’ll. So if you Disney loving people who come out to Disneyland Resort have a free day and want to explore South OC - highly recommend San Juan Capistrano. You can actually take the Metrolink from Anaheim Artic directly to this area. Hubby had a local beer & I had a Ca chard.
I started with the Beet the Winter Salad - OMG

and I had a cup of the seafood chowder. Didn’t really need it. Since the salad was crazy big & delicious, but the chowder was savory and yummy.
