What’s for Dinner Tonight?

It snowed off and on all day today (it’s snowing now) so I WFH today. The roads still look snow covered and they canceled schools again tomorrow. I’m going to WFH again. We got about 2 feet. It’s knee deep for me. I’m hoping whatever they are talking about for next weekend misses us.

I was craving something warm and comforting. I made tortellini in a cream sauce with salad and garlic bread.

homemade alfredo is SO much better than anything you can get in a jar


dh baked a loaf of sundried tomato sourdough bread today so I made a pot of clam chowder.

I agree. We've been trying to cut back on our processed. I know jar is cheaper, but I tend to agree with you on homemade is better.

Chicken and dumplings tonight. My boyfriend's stomach was a little upset so he grabbed a bowl before I added cream. I obviously ate mine with cream.

I think it’s shrimp scampi tonight. I’m home from work (school ) again today. I work in the city and I don’t think they have anywhere to put all the snow. The parking around my building is already terrible nevermind adding a foot of snow. And it’s not melting anytime soon! I don’t really know how tomorrow is gonna be much different.

I am over winter too! It looks like we got another 3-4 inches of snow overnight. DH cleared our driveway again and after lunch we'll head back to my parents house to do theirs again. Good thing I have leftover Ground Beef Bibimbap so I don't have to cook.

Soup is cooking. All the prep last night when I got home from work - chopping, dicing, and loading up in the crockpot - stew meat, garlic, onions, celery, carrots, green beans, diced tomatoes, thyme, salt, pepper, basil, bay leaf, parsley, paprika, and beef stock. Stuck it in the fridge overnight, then this morning before leaving for work, plugged it in to start cooking. House should smell great when I get home and just need to make some ditalini pasta to toss in.. We Floridians don't get the winter most of the rest of the country is getting, but for us, it's still cold with highs in the low 60s and low tonight in the upper 40s...perfect for vegetable beef noodle soup.
