What’s for Dinner Tonight?

Decided to start cooking this morning before my helper got here and doing pretty well. Good thing D. set up the kitchen before she left yesterday which makes my life easier.

Stared into the somewhat stuffed fridge and decided to make some side dishes that should go well w/ or w/o the gumbo. One potato equals potato salad for at least 2 servings. 6 to 8 ozs of green beans mixed w/ the smoked ham will give me smothered greens.

Love using up those lil bits that like to hide in the veggie bin turning it into a science project 🤣
 

I’m back from a fun few days in NYC. We saw phish each night at Madison Square Garden. So we never really had dinner more like breakfast and a late lunch.

Sunday we drive down leaving around lunch time. We had Italian once we got to the city. I had pesto gnocchi. I had some peanut m&ms at set break and some Chex mix at the hotel late night.

Monday I had lemon ricotta pancakes for breakfast. I had a challah grilled cheese with fries and a mule before the show. I had an ice cream cone at set break and a piece of pizza after the show.

Tuesday I had berry French toast for breakfast. I had shrimp and veggie noodle bowl before the show. I had a soft pretzel at set break. We drove home after the show. I had some Chex mix on the ride home.

I feel like eating becomes odd when I see several shows in a row 😂

This morning I had a bagel I brought home with me for breakfast. Tonight I’m making seared scallops with mashed potatoes, and roasted asparagus.

Today is DH's birthday. We have a game tonight, so he wanted takeout from the restaurant in his hometown that was his childhood favorite. Yeah, that restaurant has been around a looonnnng time. :laughing: DS picked it up & treated us. DH ordered chicken tenders w/gravy, mashed potatoes, okra & hushpuppies. DS ordered chicken tenders, potato salad, okra & a biscuit. I really wanted the tenders w/gravy, but decided that wasn't a good idea & ordered a grilled chicken salad instead. DS also picked him up a cake on the way home.

Well the BC lasagna was approved by DS as well! There was one slice left he took to work for supper. I froze the rest to have another time.
Tonight we’re having a whole roasted chicken with rice and a veggie.
Glad your DS liked it too! We have some in our freezer from Christmas Eve and my two sons will take it with them when they head back to their places this weekend. We're heading to my SIL for games and apps tonight. I'm bringing wings. Happy New Year everyone!
 
Probably no dinner tonight. Family lunch today. We usually do it on NYE, but 2 had to work.

Appetizers (junk food mostly). Every one gets a pick and then I add more.

Taquitos, Perogies, egg rolls, jalapeno poppers, tater tots, Habanero corn muffins, mini corn dogs, cheese and crackers, chips and salsa, Zebra corn, mini Bundt cakes (cut in 4ths, those from Christmas). Plus DD will bring something GF.
Now to figure out timing for getting them all in the oven.

Forgot the Pizza rolls (DGS would not like that)

I have always wanted to try making this but know it’s time consuming. I actually have never really liked cooking, 🤣 and if it takes too long I get frustrated. DH doesn’t mind cooking so I know he’ll help out.

Good luck! I haven't tried it but her recipes are usually excellent. I get frustrated with long recipes too. Not sure yet what we're having tonight. Something with thin sliced chicken breasts since that's what I have defrosted.

Our youngest son ended up coming over for NYE dinner. That was a nice surprise. 🤗

Tonight’s dinner will be lemon chicken orzo soup and cheesy garlic breadsticks. Maybe I’ll throw together a salad to go with.

Thanks for the encouragement!!! I also like Ree’s recipes! I made her sausage, egg, cheese and potato casserole Christmas morning. It was delicious!
