What’s for Dinner Tonight?

We spent Christmas wrapping for DD and her family, then went over to DD's around 2:45pm. I didn't have time to do the cooking I'd planned. We spent the afternoon/evening grazing on nachos, charcuterie (pre-bought, and when I unwrapped it the cheese was moldy, grrr), fruit salad, lasagna soup, rolls, maple brown sugar cookies, orange/chocolate cheesecake.

Today DH and I opened OUR Christmas presents and I spent the day reading my new book. We had greens salad and onion soup for lunch, and I made baked scallops and shrimp with rice and turnip (leftover) for supper. Pretty easy day. I intend to finish reading my book tonight!
 
We both worked today (I a half day then cleaned out most of the storage unit and DW a full 12-hour day ... thankfully she's hourly pay). So we ate leftover meatballs we cooked on Christmas Eve, and I made some garlic roasted potatoes in the oven. We didn't have any leftovers, and that was the goal since we're leaving town tomorrow for a few days.
 
what else-christmas (and christmas eve) leftovers. it's always planned to be that way :thumbsup2 tomorrow we will continue by having a breakfast dinner utilizing the honey baked ham for eggs benedict and I have'nt decided yet-either making some hash browns or using the airfryer to make another batch of THE BOMB frozen latkes I discovered at trader joe's.
 

Yesterday hubs and I just stayed in all day and binged watched old school movies. Groundhog Day, You’ve Got Mail and Bridesmaids. All funny & cute. Ate lot’s of leftovers!

We’re going down to the coast this afternoon. So we’ll see what kind of food adventures we can get into. Happy Saturday! 🌞

That's funny. DH and I watched Groundhog Day a couple weeks ago! Very cute and funny.
 
Made the best of picking one of the worst weather times for a party as NYC had wet snow and blustery winds yesterday.
First I changed my menu from appetizer trays to a warming soup as it seemed more in tune with the weather. Then I needed to organize transport since some of us don’t do well in the snow. Thank goodness for Uber XL. Just had some meet at specific corners and arranged for the LI guy to pickup the woman who lives on the Queens border.

The menu became seafood and corn chowder, Portuguese style with mashed potato fritters courtesy of my freezer and leftovers. Frozen summer corn, cod loin, sea scallops and wild caught shrimp were the basis for the soup. Upped the overall warmth by dusting the seafood with smoked paprika and used a mixture of frozen corn broth and bottled clam juice for the liquid. Threw the last of the chopped kale in the soup towards the end. Sautéed some sliced linguica and placed in a separate bowl so the carnivores and vegetarians could live in peace.

Baked the potato + leek fritters and topped with a dollop of crème fraiche. Served along side the soup bowls instead of bread.

The gingerbread and espresso cocktails went over better than I expected even though I didn’t think they went with the new menu. There was no mix left so I guess my guests disagreed with me, lol. Also served mulled spiced cider and that was enjoyed too.

Made a “cheater’s version” of a trifle for dessert : lots of whipped cream (some from a can), a gingerbread cake mix with added spices and chopped sugared orange rinds and a can of pumpkin purée.

Had a nice time hanging out with friends for probably the last time this year.
 
"Chinese" sausages (from the grocery store... basically sausages with red stuff brushed on), Trader Joe's veggie fried rice, and probably broccoli. LittleGuy is here for supper and overnight, so I'm sure copious quantities of popcorn will be consumed throughout the evening!
