What’s for Dinner Tonight?

My parents just left. Wonderful to spend the day with them!

For breakfast I made cinnamon rolls and Mini candy cane pastry

My parents asked for appetizers so I made Brie bites (Brie wrapped in crescent rolls), pigs in a blanket, Caesar cups, potato puffs (my mom made these), charcuterie board (cheese from Madison cheese shop), orange shortbread with cranberry relish, Junior cheesecake , and a cookie platter.

One of the last meals of 2026 with the associated ups and downs, 🤭.
Planned to make a traditional horseradish sauce but neglected to make the crème fraiche in advance (whadda dunce!) so put some heavy cream in a jelly jar making whipped cream and added the horseradish and lemon to it. Worked fine, thank goodness. Ate off paper plates since I was too lazy to clean another dish and since I’m tired of sampling martinis opened up a bottle of Champagne and added a bit of Trisha Yearwood’s Christmas Cup cocktail syrup to it. Not bad.

Christmas dinner was blackened ribeyes on the grill and fried spinach with olive oil and garlic. Just had a friend over as my brother's family was away so small Christmas with a friend.

Tonight, whipping up some General Tso's chicken. Chicken thighs cut into chunks, brined and seasoned in a freezer bag since last night, then egg-batter dipped and rolled in corn starch and seasonings, dropped in the deep fryer, taken out and then re-fried a second time. Drenched in General Tso sauce (hoisin, soy, honey, red pepper, chicken broth, sugar, rice vinegar, garlic) and served over steamed white rice. Serves at least 4 and I'll be eating it just for me, so I'll have lots of leftovers. Tomorrow night, two friends coming over for late Christmas and I've got my homemade chicken parm thawing out from last week to serve with angel hair pasta. Brother returns Sunday and we'll get together for beef tacos.

I’m happy to be chilling at the moment with no dinner menu for tonight or plans. Just a cup of coffee! I have left over tri tip, so tacos will definitely happen this weekend. Think I’m going to have hubby take me out for a bit to eat later. If, I can get out of my lounge wear. 🤣

Sounds like you do a nicer, leaner taco salad. My taco salads are delicious, but definitely NOT lighter - they're lettuce filled with seasoned ground beef, cheddar cheese, onions, tomatoes, sour cream, salsa, and tortilla chips. I often need a lighter meal the next night after I do taco salads for dinner!
