Thanks for the tip. I never would have thought to use buttermilk. It's not something we buy. I'll try your way, if he doesn't end up buying it premade. Have you ever tried premade from the refrigerator section? I don't want to buy it, if it's awful.The first time I made it we all thought it was gross. But then I found a skinnytaste mashed cauliflower recipe that added buttermilk and garlic and it's pretty good. I don't usually have buttermilk on hand so i just add a tablespoon of vinegar to regular milk.
